Nandu Rasam / Spicy Crab Soup

Nandu Rasam / Spicy Crab Soup is one among the delicious non-vegetarian soup. This can be consumed both as soup and rasam, when Nandu Rasam is served with steamed hot rice it is rasam and when it is served as such in a bowl, it is soup. Nandu Rasam / Spicy Crab soup is most preferably prepared during winter season and perfect when you have sore throat, cold or nose blockage.

Nandu Rasam / Spicy Crab Soup

Nandu Rasam (நண்டு ரசம்)/ Spicy Crab soup (நண்டு சூப்)which is very thin in texture, but with delicious taste and wonderful aroma. Mostly crab legs are used in this recipe along with a crab. Also break the crab legs and add it to the soup/rasam, so that the flavor gets well to the rasam/soup. Very simple and easy to prepare, give a try and share your feedback.

Nandu Rasam / Spicy Crab Soup

Ingredients:

  • Crab / நண்டு– 1 no
  • Crab Legs / நண்டு கால்கள்– 7 nos
  • Coriander stalks / கொத்தமல்லி– 5 nos
  • Curry leaves / கறிவேப்பிலை– a sprig
  • Cumin seeds / சீரகம்– 1 ¼ tsp
  • Black pepper / மிளகு– 1 ¼ tsp
  • Small Onions / Pearl Onions / சின்ன வெங்காயம்– 20 nos
  • Tomato / தக்காளி– 3 nos
  • Fenugreek seeds / வெந்தயம் – ¼ tsp
  • Red chillies / மிளகாய் வத்தல்– 2 nos
  • Garlic / பூண்டு– 5 cloves
  • Lemon juice / எலுமிச்சை சாறு– 1 ½ tsp
  • Coconut oil / தேங்காய் எண்ணெய்– 1 tbsp
  • Salt / உப்பு– 1 tsp

Making of Nandu Rasam / Spicy Crab Soup –

 

Preparation:

  • Peel and finely chop the half of the quantity of small onions.
  • Squeeze the tomatoes in water and keep it aside.
  • Coarsely crush a tsp of cumin seeds, a tsp of black pepper, garlic cloves, leftover whole onions and half the quantity of coriander stalks.
  • Heat oil in a heavy bottom vessel, add in the leftover ¼ tsp of cumin seeds, fenugreek seeds, curry leaves and wait until they crackle.
  • Tear the red chillies into pieces, add it to the vessel and cook for 5 seconds.
  • Add in the crushed ingredients all together to the vessel.
  • Add the crab and crab legs, sprinkle ½ tsp of salt and cook for 5 mins.
  • Pour in the tamarind extract, add salt, mix it well.
  • Cover and cook in medium flame for 15 mins or until the crab is cooked well.
  • Sprinkle coriander leaves, remove it from fire.

Serve hot as such or with steamed rice.

Creamy Fish Soup recipe / How to make Meen Soup at home / Winter recipes

Creamy fish soup is a delicious and perfect non-vegetarian soup for dinner, because of its creamy, little spicy and aromatic flavor. Creamy fish soup can be prepared in just 10 mins if you have you fish stock ready, else it would take 20 mins to prepare. In tamil we call it as “Meen soup”, Also this meen soup is prepared with basic ingredients available in all Indian kitchens.

Soups are most comforting dish during winters and sick times. I am not a soup person, but there are times when I like to have soup paired with some bread toast. This fish soup / meen soup is my long wait recipe that I wanted to try at home, I have used 2 to 3 pieces of fish and then it was the pieces from head and bones. Usually I add fish head along with 1 or 2 tail pieces to the curry, but rest of the pieces would be fried, as our family likes to have fish fry more than the fish in curry. This Creamy fish soup is liked by the whole family and been a very comforting food for our sore throat, also perfect for winter and so glad to enroll this to my winter recipes.

Creamy Fish Soup recipe / How to make Meen soup / Winter recipes

The dish came into existence, when I had head pieces leftover at my refrigerator. This fish soup thick and creamy and mildly spiced with ginger and pepper, with the flavor of few winter veggies. This soup can be paired with bread toast or even this can be served along with steamed rice, but make sure to discard the bones. Such a drool and comfort food, give a try and share your feedback.

Ingredients:

  • Fish stock:
    • Fish pieces (head and tail pieces) – ½ kg
    • Water – 1 ½ litres
    • Cumin seeds – ½ tsp
    • Black pepper – ½ tsp
    • Coriander leaves – 3 stalks
    • Onion – 1 no
    • Salt – ¼ tsp
  • Butter – 2 tbsp
  • Fish (boneless) – 200 gms
  • Potatoes – 2 nos (medium size)
  • Carrots – 1 no
  • Onion – 1 no
  • Tomato – ½ no
  • Garlic – 4 cloves
  • Ginger – 1 no (1” inch stick)
  • Green chillies – 1 no
  • Coriander leaves – 2 stalks
  • Coconut milk – 1 cup
  • Lemon juice – 1 tbsp
  • Black pepper powder – ¼ tsp
  • Salt – ½ tsp

Preparation:

  • Peel and roughly chop an onion and finely chop the other one and garlic, keep it aside.
  • Separate the coriander stalks and leaves, keep it aside.
  • Peel and slice (length-wise) the potatoes and carrots, keep it aside.
  • Chop the tomatoes, slit the green chillies and keep it aside.
  • Preparing Fish stock: Heat 1 ½ litres of water, add roughly chopped onions, fish head and tail pieces, add crushed cumin seeds and black pepper along with roughly chopped coriander stalks and salt. Let it boil for 15 mins or until the fish pieces are cooked well. Strain the fish stock and remove the other.
  • Heat a sauce pan or heavy bottomed vessel, add butter, onions, ginger and garlic, cook until they turn transparent.
  • Add the carrot, potato and boneless fish pieces, cook for few min and pour in the strained fish stock, cook until the carrots and potatoes become tender.
  • Pour in the coconut milk and sprinkle pepper powder and salt, cover and bring it to boil.
  • Pour in the lemon juice.
  • Sprinkle chopped coriander leaves and remove from fire.

Ingredients:

  • Pasta / Spaghetti – 200 gms
  • Green peas – 100 gms
  • Prawns – 250 gms
  • Onion – 1 o
  • Garlic – 10 cloves
  • Mixed Italian herbs – 2 tsp
  • Maida / All-purpose flour – 2 tbsp
  • Butter – 2 tbsp
  • Red chili flakes – 1 ½ tsp
  • Coriander leaves – 4 stalks
  • Salt – 1 tsp
  • Fresh cream – 150 ml

Making of Creamy Garlic Prawn Spaghetti –

Preparation:

  • Peel and finely chop the onions and garlic, clean and devein the prawns and keep it aside.
  • Boil 5 cups of water, add the spaghetti and green peas followed by a tsp of oil and ½ tsp of salt.
  • Meanwhile, heat butter in a heavy bottom vessel, wait until it melts.
  • Add the onions and garlic, cook until they turn golden brown in color.
  • Add prawns followed by salt, half the quantity of Italian herbs and red chilli flakes, cook until the prawn in half cooked.
  • Add maida / all-purpose flour, cook for a min, pour a cup of water and cook in medium flame.
  • Once the sauce starts thickening, pour the fresh cream, followed by half the quantity of coriander leaves, cook for 2 min in low flame.
  • Meanwhile drain the water from the spaghetti and green peas, add it to the sauce, sprinkle leftover Italian herbs and red chilli flakes.
  • Cook in low flame for 2 mins, remove it from fire and garnish it with the leftover coriander leaves.

Serve hot with Honey Glazed chicken.
