Lamb leg soup / Aatu kaal soup

Lamb leg soup is a very authentic soup recipe from South India.It is made from the smoked leg of Lamb. It is mildly spiced but well flavoured. It is very healthy and good for kids with poor appetite.

Ingredients:

  • Lamb leg – 2 legs
  • Shallots/Sambhar onion – 10 nos
  • Tomato – 1 no
  • Garlic – 5 cloves
  • Ginger – ½” inch stick
  • Turmeric powder – ¼ tsp
  • Oil – 1 tsp
  • Cumin seeds – 2 tsp
  • Black peppercorns – 1 tsp
  • Lemon juice – 1 tsp
  • Salt to taste

Preparation:

  • Chop each leg into 4 pieces.
  • Peel and crush onion, garlic and ginger.
  • Crush cumin seeds and peppercorns.
  • In a pressure cooker, boil water along with leg pieces and all the crushed ingredients with oil, turmeric powder and salt.
  • Wait for 6 whistles.
  • Pour in the lemon juice and stir it well.

Serve hot with toasted bread.

 

Carrot soup

Standard

A flavoursome healthy soup, which has the sweetness of the carrots, onion, tomato and coriander leaves. It is excellent for all seasons and for all people (adults and kids). Serve with bread toast for supper or lunch. I have served it along with fish fry.

Ingredients: 

  • Onion – 1 no
  • Tomato – 1 no
  • Carrot – 2 no
  • Butter – 1 tbsp
  • Coriander leaves – a handful
  • Cumin powder – ½ tsp
  • Pepper powder – ½ tsp
  • Salt to taste

Preparation:

  • Chop onion, tomato and carrots.
  • Heat butter in a pressure cooker. Put onion, tomato, coriander,cumin powder, pepper powder and salt.
  • Stir them for about 10 mins.
  • Pour two cups of water and wait for two whistles.
  • Let it cool and grind it in a mixie.

Serve hot with toasted bread slices.

Cucumber raita

Cucumber raita is very simple and easy side dish. Cucumber raita is very special for it’s cooling  properties and so they are made mostly on summer.

Ingredients:

  • Cucumber – 2 nos
  • Curd /Yogurt – 1 cup
  • Green chillies – 2 nos
  • Salt to taste
  • Coriander leaves – a handful

Preparation:

  • Peel and finely chop the cucumber.
  • Chop the green chillies.
  • Beat the curd with salt.
  • Put the cucumber, green chillies and coriander leaves.
  • Stir it well.

Serve in another half an hour time.
