Happy New Year - 2015

Wishing everyone whole hearted very very Happy and prosperous New Year. Also wish all of you good health, all time peace, plenty of wealth, last but the most important thing which brings everything in your life – best and better relationships with everyone and all your dreams come true.

Well from my side last year was good, I am happy that I did something in my life and still got lot more things to do. I thank everyone who has supported me, who have encouraged me and my tons of thanks to those who discourage and talk behind me, because only you people motivated me to glow. Had most of the sweetest and worst time last year, now remembering all those memories and I have taken those as lessons, memories and motivation.

The most important thing is that my life time dream has come true and yet there are few more dreams to come true. Hopefully looking forward for those dreams to come true and I could also bet that those dreams would come true soon.

Also I am happy to say that I have decided to undergo few resolutions such as

  • Do my works properly and not to worry about the outcome. Because hard work is highly paid but it takes time and stays permanently.
  • Do what I love to do, without hurting others. Life is too short, so live every moment one and only for you.
  • Do not care what about other’s reaction behind us.
  • Do not worry for anything; there is a solution to every problem.
  • Do not share any problems with anyone than my beloved ones, but share my happiness with my beloved ones.
  • Love to be as me at anytime and love to be with the countables those who accept me as me.

 

Duck curry – 3 / Vaathu kulambu

From the past two trips whenever I am to my hometown (Tuticorin), we never miss to get this Duck meat on Karur – Namakkal highways. Duck is a staple food of those people and there are too many roadside hotels and also they got their own Duck farm. We use to have Duck fry with parotta or idli or Dosa among one of those hotels and carry some of the raw meat for cooking.

As already I have posted few duck recipes, now again with new recipes with new taste, flavors and attractive colors. Let us move to the recipe…

Duck curry / Vaathu kulambu - 3

Duck curry / Vaathu kulambu – 3

Ingredients:

  • Duck meat – ½ kg
  • Red chillies – 5 nos
  • Black peppercorns – 1 tsp
  • Fennel seeds (Sombu) – 1 ½ tsp
  • Cumin seeds – 2 tsp
  • Coriander seeds – 2 tsp
  • Methi / Fenugreek seeds – ½ tsp
  • Mustard seeds – ¼ tsp
  • Curry leaves – two string
  • Onions – 2 nos (medium sized)
  • Ginger-garlic paste – 1 tbsp
  • Turmeric powder – ¼ tsp
  • Salt to taste
  • Coconut pieces – 1 ½ tbsp
  • Oil – 3 tsp

Preparation:

  • Dry roast red chillies, cumin seeds, coriander seeds, fennel seeds, black peppercorns and methi / Fenugreek seeds in a kadai, till the raw smell goes off. Bring it to room temperature and grind it to a fine paste by adding little water. Keep it aside.
  • Dry roast coconut pieces in a kadai and grind them to a fine paste by adding little water. Keep it aside.
  • Heat oil in a pressure cooker, add mustard seeds, a pinch of cumin seeds and half of the curry leaves. Wait till they crackle.
  • Add in the onions and ginger-garlic paste, cook till the onions turn transparent.
  • Add in the Duck meat followed by turmeric powder and salt. Cook till the meat gets blnd with the meat.
  • Add the grounded spice paste and cook till the raw smell goes off.
  • Add the grounded coconut paste and cook till the raw smell goes off.
  • Pour in three cups of water and bring it to boil.
  • Cover with the lid and wait for 5 whistles. Remove the lid when the pressure is released.
  • Transfer it to a bowl and garnish it with the leftover curryleaves.

Serve hot with steamed rice, idli, dosa and parotta.

Note: Duck meat consumes time to cook, whereas the male duck consumes less time compared to the female one. But the taste, flavor and fragrance remain the same. You could little amount of methi / Fenugreek seeds to all the Duck dishes, since the duck meat produces heat and consists of fat.

When I found out very few pieces of fish lying in my refrigerator and would not be sufficient to prepare any dish that would be enough for whole family. Got an idea all of sudden to prepare fish noodles and started in action. Fish Noodles came out very well with delicious taste, wonderful aroma and colorful to eyes. Let us move on to the recipe…

Fish Noodles with Fish Fry

Fish Noodles

Ingredients:

  • Fish – 3 pieces (200 gm)
  • Hakka Noodles – 250 gm
  • Onions – 1 no
  • Capsicum – ½ no (Green color)
  • Cabbage – 50 gm
  • Carrot – 50 gm (grated)
  • Garlic – 4 Cloves
  • Turmeric powder – ¼ tsp
  • Schewzan sauce – 1 ½ tsp
  • Green chili sauce – 1 tsp
  • Tomato sauce – 2 ½ tsp
  • Soy sauce – 2 tsp
  • Ajinomoto – a pinch
  • Salt to taste
  • Fennel seeds – ¼ tsp
  • Pepper powder – 1 tsp
  • Olive oil – 3 tsp

Preparation:

  • Boil the fish with turmeric powder and salt. Once the fish is cooked, drain the water and mash them with your hands.
  • Boil the hakka noodles with salt. Drain the water and pour in a tsp of oil and stir it with noodles and keep it aside.
  • Peel and finely chop the onions, cabbage, garlic and capsicum. Peel and grate the carrot.
  • Heat oil in a kadai. Add in the fennel seeds, wait till it crackle.
  • Add in the garlic, onions and cook till they become transparent.
  • Add in the cabbage, carrot, capsicum and cook till they are half done.
  • Add in the fish and cook till they get blend with the veggies.
  • Add in the schezwan, green chili, tomato and soy sauce, cook till they get blend well with the veggies.
  • Sprinkle ajinomoto and give them a good stir.
  • Add in the noodles and stir it well by sprinkling little water.
  • Sprinkle the pepper powder and give them a stir, till the noodles get blends well with the veggies, fish and sauce (masala).
  • Serve hot.

Fish fry

Ingredients:

  • Fish – 2 pieces (100 gm)
  • Soy sauce – 2 tsp
  • Lemon juice – 1 tsp
  • Pepper powder – 1 tsp
  • Salt to taste
  • Oil for frying

Preparation:

  • Take all the ingredients except fish in a bowl and mix them all together.
  • Now rub the mixture gently on the fish.
  • Marinate the fish pieces for 20 mins.
  • Heat oil in a tawa and shallow fry the fish.

Serve hot.
