Short visit to Madurai, Tamil Nadu

After a week of vacation, while the initial plan was just for 3 days, but fortunately/ unfortunately it got extended for a week. But we liked this travel, which was filled with more fun, happiness, peace, amidst of nature, colors, family gettogether, function, colors, flowers, silk, last but not least the chaos.

We started our journey towards my heaven at Masinagudi – Jungle Retreat amidst of the jungle. Once in a year this is a must to visit place for peace, nature which gives beautiful treat to eyes, ears, mind and your soul. We have a signature room, which gets booked for us every time we go. It was a peaceful, silent, warmth experience for the first 3 days.

The next three days at Madurai, well spent day with the Meenakshi Amman Temple visit, got to grab few things at the Madurai market for cooking – that food blogger moment. Then must to visit is my all-time favorite Amma Mess, fortunately we had only lunch over there, missed the dinner . Later my nephew’s engagement, it was like a family gettogether with fun, laughter, colors, silk saree, jewels, flowers and not to miss chaos 😊

The most important is the stay we had at Hotel John’s, Madurai , located opposite to Madurai Omni Bus Stand. We got to book an executive room, the room was well spaced with beautiful interiors, almost with wooden. Two to three corners of the room had beautiful and well-designed dressing table, also the wardrobe came with a safety locker.

Food was too good, they had their own restaurant and we had plenty of options to order food with a complimentary breakfast. Also amma mess was just 500 mts near to the hotel, it was a newly constructed one with super-duper space and centralized Air Conditioning.

Also we had our food at our favorite Duck Hotel on the highway near Karur, where I was introduced to the duck curry.

Most important thing after the break, when we returned home, it was two days it took to get back and sit with my blog – cleaning the home (full of dust) and the most important thing is the plenty of homeworks and classworks for kids 😦 Finally to the blog after the perfection of home.

 

Haleem / Hyderabadi Haleem / Haleem in Pressure cooker / Ramadan special – Exotic Recipe

After a month time, here comes our Exotic Wednesday – with an Exotic Recipe, due to RAMZAN / RAMADAN/ IFTAR festival, I have shared the making of Haleem. Haleem or Daleem is a popular Middle Eastern stew. It varies from region to region, but traditionally it is cooked with wheat, barley, lentils and meat, particularly Lamb / Mutton pieces.

Haleem / Hyderabadi Haleem recipe / How to cook Haleem at home

Haleem can also be prepared with Chicken, but traditionally it is prepared only with lamb meat. It is slow cooking dish which takes more than 4 hours of cooking. But as of our fast and modern today’s world, I have prepared it in pressure cooker. But it took almost 2 hrs of preparation, I would say that it’s worth spending time for such a heavenly dish.

Haleem can be served along with nan, roti or any Indian Flat bread, it can also be consumed as such. I like to have Haleem as such and never look out for any rice or breads. As Haleem possess, a paste like texture with the flavors of spices, it is easy to consume and digest.

Usually Haleem is prepared only with the lentils, wheat, barley, mutton and ginger-garlic and remains pale white in color. But I like to blend them with little spiciness and so infused little chilli powder, turmeric powder and Garam Masala. So I have shared both the versions of Haleem. It is most popular among the people of Hyderabad, Bangladesh, Middle East and Pakistan.

Haleem is prepared in Hyderabad during the Ramadan month and is transported all over the world. It is sold as a snack food and street food in Pakistani bazaars throughout the year.

Haleem / Hyderabadi Haleem recipe / How to cook Haleem at home

Must to try for all the non-vegetarians, it all looks difficult but it’s very simple and easy to make. Also Haleem can be served by topping it with fried onions, fresh coriander leaves, lemon slices, boiled egg, finely chopped mint leaves and thinly sliced ginger root.

Royal Falooda / Falooda recipe / How to make falooda from scratch at home

Falooda is one among the most popular street food all over India. Falooda has many flavors, I have already shared two falooda recipes – Sapotta / Chickoo Chocolate Falooda and Basic Falooda.

Royal Falooda / Falooda recipe / How to make falooda from scratch at home

As of Ramzan, I have prepared this Royal Falooda right from the scratch which describes the making of rose jelly, rose milk, cooking falooda vermicelli and layering. Just like that I forgot to click pictures, so do check out my video for the texture and consistency. Let me share the recipe…

Ingredients:

  • Vermicelli (Thin vermicelli) – 25 strands
  • Sabja seeds / Sharbhat seeds – 3 tbsp
  • Sugar – 5 tbsp
  • Agar-Agar / China grass – 5 gm
  • Rose essence – 3 tbsp
  • Milk – ½ litre
  • Pistachios – 10 nos
  • Vanilla Ice cream – 4 scoops

Making of Royal Falooda / Falooda –

Preparation:

  • Soak sabja seeds in a cup of water for 20 mins or until it turns light grey in color.
  • Soak pistachios in water for 30 mins, drain the water, peel of the skin, chop it to fine pieces and keep it aside.
  • Boil the milk, pour a tbsp of rose essence followed by 3 tbsp of sugar. Cook until the sugar dissolves and the milk reduces to ¾ th of the quantity.
  • Boil 2 cups of water in a heavy bottomed vessel, add the agar-agar/china grass, mix it well until it dissolves in water, pour a tbsp of rose essence, cook for 3 mins.
  • Remove from fire, pour it to a bowl, let it rest for 30 mins so that it gets sets and reaches room temperature. Later refrigerate it for 20 to 30 mins.
  • Remove it from the bowl and finely chop them into pieces, keep it aside.
  • Boil 3 cups of water in a heavy bottom vessel, add the vermicelli and cook until it turns transparent and soft.
  • Drain the water and rinse it in tap or cold water, keep it aside.
  • Take a tall glass, add a tbsp of boiled vermicelli, followed by a tbsp soaked sabja seeds, followed by a tbsp of finely chopped rose jelly.
  • Pour in the rose milk, until it ¾ th of the glass, add few pieces of finely chopped pistachios and top it with a scoop of icecream.
  • Sprinkle few pieces of pistachios, rose jelly and dried rose petals.

Serve immediately.
