There are some birthdays particularly my childhood days it was totally a bliss, later after my grand fa it was also very special because of my Hubby. Also, I strongly believe that no one in this world is left alone, everyone is accompanied with someone for anything to happen may be good or bad. But I take it as an experience of my life, in spite of this there are countable who stick to us and then there comes cause to be parted away from our life – this being a painful experience all over the life. Been such a year this was to me, full of crackling and bursting sounds which kept on rumbling my heart – but to be honest, I have experienced this once in my life and also took an oath not to experience this pain ever in my life. But unfortunately, who doesn’t fall for affection, care, friendship and love – and now again with the same experience but with much pain ever I had in life.

Happy Birthday to me (Deepa)

In spite of all these I have a blessing in my life that I have earned because of my love, care and affection – my friends, well-wishers, my family (hubby and kids), who pat my back, hold my hands, make me smile, realize you are not alone and make me come back – huge thanks to them. When I feel that everything for me in my life is over, and now dedicating my life to my Grand Fa, who raised me by teaching – “Stand for what you are, even when the whole world is against you. Stand strong and face your problem by yourself – You are a women and Women are the strongest gender in world – Keep on going in the way that keeps you safe, makes you and your surroundings happy”.

Ever since my birthday I never had a chance or never wanted to cut a cake, this year was completely special with a cake cutting, pouring of gifts, lovely birthday song by my son, first wish (this year been very special), as usual but my most favorite and expected yellow roses from my hubby. Not to miss my all social media timelines and IM filled with more and more wishes. Well Celebrated Birthday with more and more boost to my life – by realizing my life is not meant only for me, but for others and much more to do.

Thought of preparing Maggi – but when there are too many myths revolving around Maggi, few of the people ask me, why do you prepare Maggi, but just like that I ask them Don’t you use Maggi! Personally, I have experienced in my neighborhood grocery shop when I see Maggi getting filled in the racks will be over in few hours and again they fill it, this keeps on going. Maggi is most of the people’s all-time favorite where there is no age restriction right from the toddles till the elders.

Balanced diet is one which provides all the nutrients in required amounts and proper proportions. I have seen people excluding carbohydrates and fats in their daily diet instead to stay fit. But how many of them knew that balanced diet is the combination of all these. And so, no food is healthy or unhealthy – even if you proceed eating only the so claimed healthy food, how will get the balanced diet and certainly it would lead you to health disorder. You can have everything but the main thing here is the right quantity, you need to have the right quantity of food at regular intervals since “Too much of anything is good for nothing”

The total fat (visible invisible) in the diet should provide between 20-30% of total calories. The visible fat intake in the diets can go up to 50kg/person/day based on the level of physical activity and physiological status. So, include everything in your diet but in proper proportion.

Chicken Noodles Pancake / Noodles Pancake recipe / Maggi Noodles Recipe

Coming to noodles, Maggi noodles balances the diet because of the protein, carbohydrates and fat content in it. When compared to vegetable cheese sandwich, veg biryani, dosa, Maggi has lesser amount of fat content in it.

Also, to maintain the quality, Maggi undergoes different stages before packing, like steaming, baking and then fried for few seconds.

Now let me share a quick, easy and a simple pancake recipe with Maggi noodles, that goes out well for breakfast or a tea-time snack for kids, after school.

Ingredients:

  • Maggi noodles with masala – 1 packet
  • Whole wheat flour – 1 cup
  • Shredded chicken – ½ cup
  • Black pepper powder – ½ tsp
  • Eggs – 2 nos
  • Baking powder – ½ tsp
  • Butter – 3 tbsp
  • Milk – ½ cup
  • Salt – ¾ tsp or to taste

Preparation:

  • Toast the shredded chicken in oil with black pepper powder and salt, cook until the chicken is perfectly done.
  • Remove it to a tissue to drain the excess oil.
  • Break the eggs, add salt and beat it well.
  • Boil the Maggi noodles in a cup of water, drain the water and remove it from fire.
  • Take a mixing bowl, add wheat flour, baking soda, a tbsp of butter and mix it well.
  • Pour milk to the bowl, mix it well and make sure no lumps are formed.
  • Add the Maggi noodles, mix it well, make sure it has reached the pancake consistency, if not add little water drained after boiling the Maggi and mix it well.
  • Add the Maggi masala to it and mix well.
  • Heat a tsp of butter in a tawa, pour a spoonful of batter, drizzle little butter, and cook on both sides.
  • Remove it from fire, once it turns golden brown on both sides.

Serve hot with a tbsp of butter.

Rajgira is nothing but Amaranth seeds / முலக்கீரை விதை, usually payasam/kheer is prepared with this in North India for Navratri. Commonly it is prepared during Vrat time, as its highly nutritious and very rich in protein.

Ingredients:

  • Rajgira / Amaranth seeds / Mulakeerai vithai – 1 cup
  • Palm Dates Sugar / Sugar – ¾ cup
  • Cardamom – 3 nos
  • Milk – ½ litre
  • Cashew nuts – 10 nos
  • Badam / Almonds – 10 nos
  • Saffron strands / Kungumapoo – few strands

Preparation:

  • Take the rajgira / amaranth seeds in a strainer and rinse it well in running water.
  • Drain the water completely, transfer it to pressure cooker, for 1 cup of rajgira, pour 1 ½ cups of water and pressure cook for 3 whistles in medium flame.
  • Meanwhile boil the milk in a pan, crush the cardamom, add cardamom once the milk is boiled and cook in low flame, until the milk reduces to half the quantity.
  • Remove the lid from the pressure cooker, once the pressure is completely released.
  • Pour the pressure-cooked rajgira to the boiling milk, mix it well and cook for few mins.
  • Once it starts thickening, thinly slice the cashew nuts and almonds, add it to the kheer, mix it well and cook for a min.
  • Add the Palm dates sugar / panangarkandu to the kheer, mix it well, cook for a min or until the sugar is dissolved.
  • Sprinkle the saffron strands, remove it from fire.

Serve hot or chillied. You serve it along with poori for breakfast or serve it as dessert in meals.
