Ginger Bread Man is one of my favorite when it comes to Christmas, because of the wonderful aroma of ginger, spices and butter that pops out of the oven while baking gives the warmth of winter along with the feel of Christmas. We have lit up our Christmas tree and so wish to share a different recipe daily to boost the Christmas mood in everyone.

Been born and brought up in Thoothukudi, down south of Tamil Nadu, where there are few Anglo-Indians along with many Christian people, our town will be glowing bright with lights all over the streets, Christmas carousels, people partying and so on. Miss those childhood memories, we kids running to friend’s place to the see their Christmas tree and Kudil – where they place the idols of baby Jesus which replicates the birth place of Jesus along with his family and friends. Makes me feel nostalgic now.

Eggless GingerBread Man Cookies recipe / Eggless Ginger Cookie recipe / Eggless Christmas cookie recipe

Let us move on to our Gingerbread Man, these Eggless Gingerbread Man cookies, can be prepared in an hour time, with the spice mix, Maida, butter and molasses. I have substituted Palm Jaggery Syrup instead of Molasses, you can also substitute it with honey or maple syrup. Let me share the recipe…

Ingredients:

  • Maida / All-purpose flour – 1 ½ cup
  • Brown sugar – ¼ cup
  • Palm Jaggery syrup – ¼ cup
  • Butter – ½ cup (room temperature)
  • Baking powder – ½ tsp
  • Baking soda or cooking soda – ½ tsp
  • Salt – A pinch
  • Dry Ginger powder – 1 ½ tsp
  • Cloves powder – ½ tsp
  • Cinnamon powder – ½ tsp
  • Nutmeg powder – ½ tsp
  • Cardamom powder – ½ tsp
  • Gingerbread Man cookies cutter

Making of GingerBread Man Cookies –

Preparation:

  • Take butter, brown sugar, palm jaggery syrup together in a bowl, mix it well or until it forms a creamy texture.
  • In a bowl, sieve flour and all the spice powders together along wit baking powder, baking soda and salt.
  • Add the sieved flour little by little to the wet ingredients, fold it well make sure no lumps are formed.
  • Knead the dough with hands and roll it in a cling film, refrigerate it for 30 mins.
  • Remove the cling film, let the flour rest for 5 mins or until it reaches room temperature.
  • Grease a tray and preheat oven to 180-degree C.
  • Dust the working surface with Maida/all-purpose flour, flatten the dough and cut using Ginger Bread Man cookie cutter.
  • Place it over the greased tray and bake it for few mins or until the cookies are bakes in 180-degree C.
  • Remove the tray from microwave, let it rest for few mins or until it reaches room temperature.
  • Remove the Gingerbread man cookies and store in an air-tight container.

Store in an air-tight container, it stays fresh for 2 weeks’ time.

Ingredients:

  • All-purpose flour – 1 ½ cups
  • Baking soda – 1 tsp
  • Cocoa powder – ½ cup
  • Salt – a pinch
  • Brown sugar – 1 cup
  • Vegetable oil – ¼ cup
  • Water – 1 ¼ cups
  • Vinegar – 1 tsp
  • For Icing – I have used Pillsbury Creamy Vanilla Icing – 1 box

Preparation:

  • Take a wide mouth bowl, sieve all-purpose flour, cocoa powder, baking powder and salt, all together.
  • Take another bowl, add the brown sugar, pour water, vegetable oil, vinegar and beat all these together until the sugar dissolves.
  • Add the sieved ingredients to the wet ingredients, little by little and fold it gently (make sure to fold only in one direction).
  • Meanwhile pre-heat microwave to 180-degree C, place the cupcake liner to the cupcake tray, fill half the cupcake liner with the cupcake batter.
  • Bake at 180-degree C for few mins or until the tooth pick inserted in the center of the cake comes out clean.
  • Remove it from microwave, let it rest until it reaches the room temperature.
  • Open the icing box, mix it well, transfer it to a piping cone using a spoon, and squeeze it over the cake as you desire.
  • Refrigerate the cakes for few mins, once it’s done.
  • For witches’ eye – I squeezed out the icing to a circle at the center of the cake and placed a Choco chip at the center.
  • For Devil – I have squeezed icing all over the circle, placed a red color flavored almond for eyes and then a Choco chip in the center.

Eggless Spooky Witches Finger recipe / Eggless Halloween Recipe / Eggless Whole Wheat cookie

Ingredients:

  • Whole wheat flour – 1 ½ cups
  • Sugar – ½ cup
  • Butter (room temperature) – ½ + 1 tbsp
  • Milk – 3 tbsp
  • Baking powder – 1 tsp
  • Almonds / Badam – 10 nos
  • Red food colour – ¼ tsp

Making of Eggless Spooky Witches Finger / Halloween video recipe –

Preparation:

  • Blanch the almonds and slice them into two equal halves.
  • Mix 2 tbsp of water in red food color and soak the sliced almonds / badam to it.
  • Make sure to use the butter only at room temperature.
  • In a wide mouth bowl, sieve the wheat flour along with baking powder and keep it aside.
  • Grind the sugar to a fine powder, add it to flour mixture.
  • Add the butter to the flour, crumble well with your fingers.
  • Pour milk little by little (1 tbsp at a time), and knead the flour to a dough.
  • Roll the kneaded dough in a cling film, refrigerate for 15 mins, later remove it and wait for 5 mins.
  • Dust the work area with flour, take a small portion of the dough, roll it length wise, give impression with fork, place a slice of almond/badam in one edge of the rolled dough. (looks like finger)
  • Meanwhile preheat microwave to 180-degree C, grease a tray, place the rolled fingers over the tray and bake them at 180-degree C for 5 mins or until they are baked.
  • Remove it the tray from the oven, let it rest for 10 mins, remove it to a plate and bring it to room temperature.

Store it in an air-tight container, once it reaches room temperature.
