Ingredients:

  • All-purpose flour – 1 ½ cups
  • Baking soda – 1 tsp
  • Cocoa powder – ½ cup
  • Salt – a pinch
  • Brown sugar – 1 cup
  • Vegetable oil – ¼ cup
  • Water – 1 ¼ cups
  • Vinegar – 1 tsp
  • For Icing – I have used Pillsbury Creamy Vanilla Icing – 1 box

Preparation:

  • Take a wide mouth bowl, sieve all-purpose flour, cocoa powder, baking powder and salt, all together.
  • Take another bowl, add the brown sugar, pour water, vegetable oil, vinegar and beat all these together until the sugar dissolves.
  • Add the sieved ingredients to the wet ingredients, little by little and fold it gently (make sure to fold only in one direction).
  • Meanwhile pre-heat microwave to 180-degree C, place the cupcake liner to the cupcake tray, fill half the cupcake liner with the cupcake batter.
  • Bake at 180-degree C for few mins or until the tooth pick inserted in the center of the cake comes out clean.
  • Remove it from microwave, let it rest until it reaches the room temperature.
  • Open the icing box, mix it well, transfer it to a piping cone using a spoon, and squeeze it over the cake as you desire.
  • Refrigerate the cakes for few mins, once it’s done.
  • For witches’ eye – I squeezed out the icing to a circle at the center of the cake and placed a Choco chip at the center.
  • For Devil – I have squeezed icing all over the circle, placed a red color flavored almond for eyes and then a Choco chip in the center.

Eggless Spooky Witches Finger recipe / Eggless Halloween Recipe / Eggless Whole Wheat cookie

Ingredients:

  • Whole wheat flour – 1 ½ cups
  • Sugar – ½ cup
  • Butter (room temperature) – ½ + 1 tbsp
  • Milk – 3 tbsp
  • Baking powder – 1 tsp
  • Almonds / Badam – 10 nos
  • Red food colour – ¼ tsp

Making of Eggless Spooky Witches Finger / Halloween video recipe –

Preparation:

  • Blanch the almonds and slice them into two equal halves.
  • Mix 2 tbsp of water in red food color and soak the sliced almonds / badam to it.
  • Make sure to use the butter only at room temperature.
  • In a wide mouth bowl, sieve the wheat flour along with baking powder and keep it aside.
  • Grind the sugar to a fine powder, add it to flour mixture.
  • Add the butter to the flour, crumble well with your fingers.
  • Pour milk little by little (1 tbsp at a time), and knead the flour to a dough.
  • Roll the kneaded dough in a cling film, refrigerate for 15 mins, later remove it and wait for 5 mins.
  • Dust the work area with flour, take a small portion of the dough, roll it length wise, give impression with fork, place a slice of almond/badam in one edge of the rolled dough. (looks like finger)
  • Meanwhile preheat microwave to 180-degree C, grease a tray, place the rolled fingers over the tray and bake them at 180-degree C for 5 mins or until they are baked.
  • Remove it the tray from the oven, let it rest for 10 mins, remove it to a plate and bring it to room temperature.

Store it in an air-tight container, once it reaches room temperature.

Mango Cheese Cake is a rich, creamy dessert prepared with Mangoes. Mango cheese cake can be prepared in two forms, one with paneer and condensed milk whereas the other with milk, cream cheese and sugar. I have prepared this with paneer and condensed milk, as it was very easy and took less time to prepare.

Mango Cheese Cake / Mango Cheese Cake with Condensed Milk

Usually I like cheese cakes, but thought it would be a big process to prepare and due to my laziness never tried it. But this time when my son’s birthday was nearing and on the other hand my mango mania – resulted in this process. The result was best and when my kids had this, my son wanted me to prepare it for his Birthday party 😊

Mango cheese cake is an easy, simple and delicious dessert, also using condensed milk and cottage cheese/paneer saves time in the making and just takes 2 to 3 hrs to get chilled. Easy and simple dessert for parties, recently it was my son’s Birthday last Monday, I was requested to prepare around 40 mini cheese cakes by him. Let me share the recipe…

Ingredients:

  • Mango – 3 medium size (mangoes) or ½ kg
  • Grated Paneer – 250 gms
  • Condensed milk – 1 tin (quantity depends on the sweetness of the mangoes)
  • Agar-Agar – 15 gms or Gelatin – 5 to 6 tbsp
  • Water – ½ cup
  • Britannia Marie Biscuits or Milk Bikis – 15 to 20 nos
  • Butter – 5 tbsp

Preparation:

  • Bring the butter to room temperature, break the biscuits to pieces.
  • Take the broken biscuit pieces, cinnamon powder and butter in a mixier and grind it to a fine powder.
  • Transfer it to a bowl, mix it all together and keep it aside.
  • Boil ½ cup of water in a sauce pan, add the agar-agar or gelatin and stir well until it dissolves.
  • Remove it from fire once it dissolves, let it come to room temperature.
  • Peel and roughly chop the mangoes, meanwhile grate the paneer.
  • Blend mangoes and paneer together in blender by drizzling little water, to a fine paste.
  • Pour in the condensed milk and grind it well.
  • Pour the ground mixture to a mixing bowl.
  • Pour in the agar-agar or gelatin mixture to the ground mango and mix it well.
  • Take baking tray, add the biscuit mixture, make it as a bed on the tray.
  • Pour the ground mixture over the biscuit layer.
  • Refrigerate for 2 to 3 hrs.

Slice and serve chilled by topping it with finely chopped mangoes and cherries.
