Kuska / Plain Briyani – How to make Kuska in pressure cooker

Kuska or Plain Briyani is prepared by cooking long grain/basmathi or jeera rice with all the flavored spices and ingredients used for briyani. This briyani is very special and commonly known as poor man’s Briyani, since it costs very less because no vegetables and no meats are used in the making. Kuska / Plain Briyani is popular in and around Madurai and Virudhunagar. My hubby used say, that he used to have it in all this college functions, but this is the first time I am gave a try at home. Kuska / Plain Briyani / How to make kuska at home

Kuska / Plain Briyani is mildly spiced, mildly flavored then Briyani, so kids like this a lot. This goes out well with any raita but I prefer onion raita, any curries may be veg or non-veg and a deep fry. Ingredients:

  • Basmathi / Long-grain / Jeeraga Samba / Jeera rice – 2 ½ cup (1 cup = 160ml)
  • Onions – 2 no’s (medium size)
  • Tomato – 1 no (medium size)
  • Green chillies – 2 nos
  • Ginger-garlic paste – 1 ½ tbsp or Ginger (1”inch stick) – 1 no and Garlic – 5 cloves
  • Cinnamon (1 “inch stick) – 1 no
  • Cloves – 4 no’s
  • Star Anise – 2 no’s
  • Stone flower / Kalpasi – 3 no’s
  • Cardamom – 2 no’s
  • Bay leaf – 1 no
  • Fennel seeds / Sombu – 2 tsp
  • Curd / Yogurt – 1 cup
  • Coconut milk – 1 cup
  • Mint + Coriander leaves – 1 cup
  • Salt to taste
  • Ghee / Clarified butter – 1 ½ tbsp
  • Oil – 1 ½ tbsp

Making of Kuska rice / Kuska Briyani / Plain Briyani –

Preparation:

  • Peel and thinly slice the onions and keep it aside.
  • Finely chop the tomatoes and keep it aside. Slit the green chillies and keep it aside.
  • Rinse and finely chop the mint + coriander leaves and keep it aside.
  • Heat ghee/clarified butter and oil in a pressure cooker, add the bay leaf, followed by flavored spices and wait until they crackle.
  • Add onions, green chillies and ginger-garlic paste, cook until the onions turn transparent.
  • Add the mint and coriander leaves, cook until they turn dark green in color.
  • Add the tomatoes and cook until they turn soft.
  • Pour the curd/yogurt, cook until the oil starts floating on the top.
  • Pour the coconut milk and bring it to boil.
  • Meanwhile clean the rice and add the rice followed by water to the pressure-cooker, add required amount of salt.
  • Pressure-cook for 3 whistles.
  • Remove the lid when the pressure releases.

Gently give a stir and serve hot.

Aamras is one such delicious and a must dish when you collect Mango recipes, easy, simple and delicious dish. This can also be added to dishes where you feel like inducing the flavor of mango. Most commonly this is served along with Poori and also it goes well with any Indian flat bread.

Ingredients:

  • Mangoes – 2 nos
  • Dry Ginger powder – ¾ tsp
  • Sugar – 4 tsp

Making of Aamras –

Preparation:

  • Peel and roughly chop the mangoes.
  • Take mangoes and sugar together in a blender and grind it to fine paste. (sprinkle little water while you grinding).
  • Transfer it to a bowl, sprinkle dry ginger powder (sukku podi) and whisk it well, so that it blends well with the dip.
  • Transfer it to a bowl and refrigerate as it stays fresh for 2 to 3 weeks.

Note: You can also substitute water with milk while grinding, but the shell life will be for few days.

What happens when there are so many mangoes around, my kids love to eat them as such, when it comes to me, I wanted to try some delicious recipe with mangoes (after eating it fresh). This resulted me in mango recipe collections and today it going to be Mango Chicken Salad.

Mango Chicken Salad / Summer Salad / Mango Recipes

This salad takes just few mins to prepare and also very easy, even kids can prepare this. This salad has sweet, crunchy, little sour, creamy and mild spice in it, due to the ingredients used in it. Let me share the recipe…

Ingredients:

  • Mango (Alphonso) – 1 no
  • Chicken – ¼ kg (Boneless)
  • Onions – 1 nos (medium size)
  • Pepper powder – 2 ½ tsps
  • Lemon juice – 2 tsps
  • Ice-berg Lettuce – 1 head
  • Cream Cheese – 3 tbsps
  • Mayonnaise – 1 tbsp
  • Cherry tomatoes – 8 nos
  • Salt to taste
  • Olive oil – 3 tbsp

Preparation:

  • Peel and cut the mangoes to medium pieces.
  • Clean and chop the chicken to small pieces, transfer it to a bowl, add 1 ½ tsp of pepper powder, 1 ½ tsp of lemon juice, salt and mix it all together. Marinate it for 15 mins.
  • Peel and thinly slice the onions (lengthwise).
  • Take cream cheese, mayonnaise, leftover pepper powder and mix it well until soft and creamy.
  • Heat olive oil in a pan, fry the marinated chicken pieces until they turn golden brown on both sides.
  • Drain the oil and transfer it to a plate.
  • Pour the drained olive oil to the cream cheese mixture, mix it well.
  • Now separate the petals of the ice-berg lettuce, take a plate and arrange it over the plate.
  • Transfer the 2 to 3 tsps of cream cheese mixture over the lettuce and spread it over the plate.
  • Add mangoes to the top it, and then sliced cherry tomatoes.
  • Add fried chicken over it and drizzle cream cheese over the chicken.
  • Serve at room temperature.

Note: You can also substitute cream cheese with sour cream and if don’t have cream cheese or sour cream you can omit the creamy portion.
