I hope the name looks funny – “Crunchy Munchy Roasted Gram”, since this snack was prepared by my hubby, during his bachelor days 😝, most commonly during the lazy times or with no pocket money, this would be their hunger food for sudden cravings with little job, easily available and less expensive ingredients. Recently when he was chatting about his good olden days in Bangalore more than 15 years ago, this resulted in the discussion of this recipe 😊.

Crunchy Munchy Roasted Gram – Tea time snack

A quick and easy snack with little work more delicious for the evening or best preferred for the rainy days are boon to most of us. Also, this fills your stomach like anything – roasted gram used here has lots of health benefits for women, onions used here gives the crunchiness and easy digestion. Give a try to this snack for your tea time with a cup of tea or coffee.

Not only me even my kids liked it. Give a try and enjoy your evenings, so now onwards do not worry about your cravings. Let me share the recipe…

Ingredients:

  • Roasted gram / Pottukadalai / Porikadalai – 1 cup
  • Onions – ¾ cup
  • Coriander leaves – 3 stalks
  • Sesame oil – ½ tsp
  • Lemon juice – 3 drops
  • Chilli powder – ½ tsp
  • Salt to taste

Preparation:

  • Peel and finely chop the onions.
  • Rinse and finely chop the coriander leaves including the stalks and keep aside.
  • Take roasted gram, finely chopped onions, finely chopped coriander leaves along with lemon juice, chilli powder, sesame oil and salt in a bowl.
  • Mix it well and let it rest for 5 mins.

Serve with coffee or tea.

Note: You can also add finely chopped cucumber, tomato with this.

Kuska / Plain Briyani – How to make Kuska in pressure cooker

Kuska or Plain Briyani is prepared by cooking long grain/basmathi or jeera rice with all the flavored spices and ingredients used for briyani. This briyani is very special and commonly known as poor man’s Briyani, since it costs very less because no vegetables and no meats are used in the making. Kuska / Plain Briyani is popular in and around Madurai and Virudhunagar. My hubby used say, that he used to have it in all this college functions, but this is the first time I am gave a try at home. Kuska / Plain Briyani / How to make kuska at home

Kuska / Plain Briyani is mildly spiced, mildly flavored then Briyani, so kids like this a lot. This goes out well with any raita but I prefer onion raita, any curries may be veg or non-veg and a deep fry. I have accompanied it with chicken curry, onion-tomato raita and chicken 65.  Let me share the recipe…

Ingredients:

  • Basmathi / Long-grain / Jeeraga Samba / Jeera rice – 2 ½ cup (1 cup = 160ml)
  • Onions – 2 no’s (medium size)
  • Tomato – 1 no (medium size)
  • Green chillies – 2 nos
  • Ginger-garlic paste – 1 ½ tbsp or Ginger (1”inch stick) – 1 no and Garlic – 5 cloves
  • Cinnamon (1 “inch stick) – 1 no
  • Cloves – 4 no’s
  • Star Anise – 2 no’s
  • Stone flower / Kalpasi – 3 no’s
  • Cardamom – 2 no’s
  • Bay leaf – 1 no
  • Fennel seeds / Sombu – 2 tsp
  • Curd / Yogurt – 1 cup
  • Coconut milk – 1 cup
  • Mint + Coriander leaves – 1 cup
  • Salt to taste
  • Ghee / Clarified butter – 1 ½ tbsp
  • Oil – 1 ½ tbsp

Making of Kuska rice / Kuska Briyani / Plain Briyani –

Preparation:

  • Peel and thinly slice the onions and keep it aside.
  • Finely chop the tomatoes and keep it aside. Slit the green chillies and keep it aside.
  • Rinse and finely chop the mint + coriander leaves and keep it aside.
  • Heat ghee/clarified butter and oil in a pressure cooker, add the bay leaf, followed by flavored spices and wait until they crackle.
  • Add onions, green chillies and ginger-garlic paste, cook until the onions turn transparent.
  • Add the mint and coriander leaves, cook until they turn dark green in color.
  • Add the tomatoes and cook until they turn soft.
  • Pour the curd/yogurt, cook until the oil starts floating on the top.
  • Pour the coconut milk and bring it to boil.
  • Meanwhile clean the rice and add the rice followed by water to the pressure-cooker, add required amount of salt.
  • Pressure-cook for 3 whistles.
  • Remove the lid when the pressure releases.

Gently give a stir and serve hot.

Happy Birthday to MY HIRI

Last week Monday it was my Son’s Birthday – no other birthdays was such hectic to me. But this little one has his own style of making me listen and the most important is making me to get in action for whatever he says – Yeah! He requested for 40 mini Mango Cheese Cake, White sauce pasta and Potato wedges for his friends who came for birthday party.

Happy Birthday to my Son – BeemBali Cake

Glad I would say that he dint requested anything for his school friends – as usual it was chocolates, because the number would been too high 😊. Personally, I have a feeling that birthdays are very special to one – which should be loaded with fun, love and gifts (I never had a birthday like that and I never wanted it ). But I love the most is I love to have the same way for my loved ones, and so birthdays are attached to my life.

Being the youngest one in the family, he’s been everyone’s fond. We had Birthday party around 7.30 p.m, all the kids in our apartment to our home. We had a cake cutting – this time we had a new theme cake called “BheemBhali – combination of Bheem and Bahubhali 😝, Bahubali comes with bow and arrow so when Bheem comes with bow and arrow its BHEEMBHALI 😊), followed by dance which was arranged by my daughter as a gift to her little brother with her friends. My hubby gifted him a bicycle, which was his love, he feels as he rides DUCATI, when he rides his cycle. The most longing thing for him is Bow and Arrow (Bahubali freakiness 😝, Bahubali – Recent Indian movie), I gifted him and he was jumping to the sky and earth.

This what is the happiness I needed to see from him, beauty about this little one is – he the one who changes my mood, in times of anger, sorrow. Wishing him a Very Very Happy Birthday with loads and loads of love, health, success and wealth all over your life.
