Eggless Spooky Witches Finger recipe / Eggless Halloween Recipe / Eggless Whole Wheat cookie

Ingredients:

  • Whole wheat flour – 1 ½ cups
  • Sugar – ½ cup
  • Butter (room temperature) – ½ + 1 tbsp
  • Milk – 3 tbsp
  • Baking powder – 1 tsp
  • Almonds / Badam – 10 nos
  • Red food colour – ¼ tsp

Making of Eggless Spooky Witches Finger / Halloween video recipe –

Preparation:

  • Blanch the almonds and slice them into two equal halves.
  • Mix 2 tbsp of water in red food color and soak the sliced almonds / badam to it.
  • Make sure to use the butter only at room temperature.
  • In a wide mouth bowl, sieve the wheat flour along with baking powder and keep it aside.
  • Grind the sugar to a fine powder, add it to flour mixture.
  • Add the butter to the flour, crumble well with your fingers.
  • Pour milk little by little (1 tbsp at a time), and knead the flour to a dough.
  • Roll the kneaded dough in a cling film, refrigerate for 15 mins, later remove it and wait for 5 mins.
  • Dust the work area with flour, take a small portion of the dough, roll it length wise, give impression with fork, place a slice of almond/badam in one edge of the rolled dough. (looks like finger)
  • Meanwhile preheat microwave to 180-degree C, grease a tray, place the rolled fingers over the tray and bake them at 180-degree C for 5 mins or until they are baked.
  • Remove it the tray from the oven, let it rest for 10 mins, remove it to a plate and bring it to room temperature.

Store it in an air-tight container, once it reaches room temperature.

Lemon chicken fry is my most awaited to try recipe, ever since I had Lemon chicken from the Hotel – The Plantain Leaf. The whole family likes this chicken, which is mildy spiced, juicy and tender.

Lemon chicken is prepared by cooking the chicken with spices and lemon juice. Also this consumes very little time to get cooked. I would say it’s one of the finger-licking dish among all of my chicken recipes. Goes out well with any Indian flat bread, as a side dish for briyani or fried rice and also good when paired with steamed rice and sambar. Let me share the recipe…

Lemon Chicken Fry Recipe / Lemon Chicken recipe / Easy chicken recipes

Ingredients:

  • Chicken – ½ kg
  • Lemon – 3 nos (medium sized)
  • Onions – 3 nos
  • Cumin seeds – ½ tsp
  • Capsicum – 2 no (medium sized)
  • Ginger-garlic paste – 1 tbsp
  • Green chillies – 2 nos
  • Turmeric powder – ½ tsp
  • Pepper powder – ½ tsp
  • Curry leaves – 2 sprigs
  • Coconut oil or any cooking oil – 1 ½ tbsp
  • Salt – 1 tsp (to taste)

Preparation:

  • Clean and roughly chop the chicken into medium pieces.
  • Peel and roughly chop the onions to medium cubes, slit green chillies to equal halves.
  • Deseed and chop the capsicum to medium pieces.
  • Cut and squeeze the juice from lemon, remove the seeds and keep it aside.
  • Take chicken, turmeric powder, salt and lemon juice all together in a bowl, mix it well and let it rest for 15 mins.
  • Heat oil in heavy bottomed vessel or kadai, add the cumin seeds and curry leaves, wait until they crackle.
  • Add the onions, ginger-garlic paste and cook until the onion turns golden brown in color.
  • Add the capsicum and cook for few mins or until the capsicum turns light green in color.
  • Add the chicken along with the marinate, cook for 2 mins.
  • Sprinkle little water, stir well, cover and cook for few mins or until the chicken is tender and juicy.
  • Sprinkle the pepper powder, remove the lid and cook for 2 mins or until the chicken becomes dry and the oil separates.
  • Remove from fire and transfer it to a bowl.

Serve hot. Lemon chicken fry can be served as a side dish for briyani, fried rice or steamed rice and sambar. Lemon Chicken is and perfect side dish for lunch or dinner.

 

 

 

 

Madraasi Deepavali Celebration – 2017 / Diwali 2017 celebrations at home

Deepavali / Diwali is an important Indian (Hindu) festival celebrated by all the Indians in India and across the world. As we are in the land of “Unity of Diversity”, each and every state people celebrate it in their own way, also Diwali is celebrated in two different states whereas south Indian celebrates it on 18 oct and North Indian celebrates it on 19th oct. Being a south Indian and living together with so many region people in our apartment, glad we got to celebrate it for 2 days.

We (South Indian) wake up, early in the morning, apply oil to the head, take bath, later start preparing snacks and food for pooja. Once they are done, we perform pooja, get blessing from the elders, and elders of our family distribute the new dress to everyone. After wearing the new dress, we have our breakfast, and the breakfast would be served in a banana leaf with too many sweets and savories that has been prepared all over a week time. As sharing is caring we distribute sweets and savories prepared in our home to our neighbors, friends – wishing them Happy DEEPAVALI.

After the sweets distribution, here comes the best part of a year waiting – It’s the crackers section. We start bursting crackers, with family, friends, with loads of fun and joy. After bursting few crackers, we return home and start watching the Television as there will be more and more fun filled program, also there will be numerous movie getting released for this Diwali. It would be more fun and super thrilled getting tickets for our favorite star movie, and then watching them at the Cinemas with the whole family as a group. Then over the evening we lit Deepam / Diya perform pooja and then during nights we start bursting out the crackers, sparkle sparklers, chakras, flowerpots and so on.
