Usually my kids like to have creamy desserts, and also when I got to see strawberries in season with street vendor, like to curate a dessert with strawberry. This resulted in my strawberry fool, more creaminess with little crunchiness would pair well and so resulted my Cardamom Pistachios Short Bread Fingers.

Strawberry Fool with Pistachios and Cardamom Short Bread Fingers


Ingredients:

  • All-Purpose flour / Maida – 1 cup
  • Butter – ¾ cup
  • Sugar – ¾ cup
  • Pistachios (finely chopped) – 12 nos
  • Cardamom powder – ¾ tsp
  • Salt – a pinch
  • Strawberry – 15 nos
  • Sugar for Strawberry fool – ¾ cup
  • Whipping cream – 1 cup
  • Lemon Juice – 1 tsp

Making of Strawberry Fool with Cardamom and Pistachios Short Bread Fingers –

Preparation:

  • Wash and chop the strawberry into pieces, pour a cup of water in a sauce pan, add the strawberries and lemon juice. Leave it to boil.
  • Blanch the pistachios and finely chop them to pieces.
  • Add sugar, give a stir when the strawberries are almost cooked.
  • Cook until it thickens and the strawberries comes to mashing consistency.
  • Beat the whipping cream until it forms soft perks, add the mashed strawberry and fold it well until it blends well.
  • Drop it to a small glass, refrigerate it for few mins.
  • Take a bowl, add the all-purpose flour/maida, butter, sugar and crumble them well with your fingers.
  • Add the blanched pistachios and cardamom powder, knead it well to a ball.
  • Wrap it in a cling film, and refrigerate for 10 to 15 mins.
  • Meanwhile preheat the microwave to 180-degree C.
  • After 10 mins, dust the working platform with all-purpose flour, take a small portion of the dough and roll it gently.
  • Cut them into rectangle (finger shape) and bake it at 180-degree C for 10 mins or until it starts turning golden brown in color.
  • Now take the refrigerated glasses, slide the shortbread fingers, sprinkle little finely chopped strawberries and pistachios.

Serve Chilled.

 

Buttermilk Biscuits

Thought of trying out something new for breakfast for kids. My kids wanted to have a dish which is similar to English and so tired my hands over this Buttermilk Biscuits. These biscuits are soft, fluffly and buttery. These biscuits can be served with breakfast or may be a tea time snack or may be a brunch. It was only few mins, there biscuits disappeared once when they are out from the oven. Give a try and enjoy with your kids. Let me share the recipe…

Ingredients:

  • All-purpose flour / Maida – 2 cups
  • Unsalted butter – 6 tbsps
  • Salt – a pinch
  • Club soda – ½ cup
  • Buttermilk – ¼ cup
  • Egg – 1 no
  • Honey – 3 tbsp
  • Unsalted butter – 1 cup

Preparation:

  • Take maida/all-purpose flour and salt in a wide mouth bowl, mix them well with your hands.
  • Grate 6 tbsp of butter to the bowl, crumble the flour along with the butter, until the flour reaches crumbling stage.
  • Pour in the buttermilk and mix well with your hands.
  • Pour in the club soda and mix well to form a dough.
  • Fold the dough well 5 to 6 times to get a proper ball shape.
  • Beat an egg in a bowl, whisk it until it becomes fluffy.
  • Preheat oven to 180 degree C. Grease a baking tray.
  • Gently spread the dough evenly all over the tray, cut it to square or rectangular pieces, brush it with the whisked egg.
  • Bake for 15 to 20 mins at 180 degree C or until it fluffs and starts turning golden brown.
  • In a bowl, take the 1 cup of butter, pour in the honey with a pinch of salt and beat it well, until they are combined.

Serve warm with Honey Butter. Bring this room temperature and store them in an air-tight container for almost and refrigerate it. Stays fresh for month time.

Fish Muffin – April Fool Recipe

Want to fool your kids, then try out this recipe. I gave my son this as muffin, he had it and told me, “Mom, where does your innovation takes you, why you want to make a spicy muffin which is salty. Really too bad”. My daughter laughed out and told him, “It’s fish cutlet, we shaped it as muffin and gave you and shouted APRIL FOOL”.

Fish Muffin

Fish Muffin

Ingredients:

  • Sheer Fish – ½ kg
  • Potatoes – 2 nos
  • Green chilies – 1 no
  • Black pepper powder – 1 tsp
  • Cumin powder – ½ tsp
  • Eggs – 3 nos
  • Olive oil – 2 tsp
  • Salt to taste

Preparation:

  • Boil the fish in water with salt, once boiled, drain the water, separate the fish from bones. Keep it aside. Mash them well.
  • Boil potatoes, peel the skin and mash them well (no lumps should be formed).
  • In a wide mouth bowl, take the mashed fish, mashed potato, sprinkle little salt, pepper powder, break 2 eggs and cumin powder.
  • Mix them well with your hands (no lumps should be formed).
  • Pour in 2 tsp of olive oil and mix them.
  • Divide it to small portions and roll them to a ball and shape them like muffin or buns.
  • Beat the leftover egg with a fork until fluffy.
  • Preheat the oven to 180 degree C.
  • Grease the muffin tray, with little oil and gently place the fish pieces and grease them with the beaten egg.
  • Bake until it turns golden in color or for 5 mins.
  • Remove from the oven.

Cut it to two pieces and serve hot.
