Buttermilk Biscuits

Thought of trying out something new for breakfast for kids. My kids wanted to have a dish which is similar to English and so tired my hands over this Buttermilk Biscuits. These biscuits are soft, fluffly and buttery. These biscuits can be served with breakfast or may be a tea time snack or may be a brunch. It was only few mins, there biscuits disappeared once when they are out from the oven. Give a try and enjoy with your kids. Let me share the recipe…

Ingredients:

  • All-purpose flour / Maida – 2 cups
  • Unsalted butter – 6 tbsps
  • Salt – a pinch
  • Club soda – ½ cup
  • Buttermilk – ¼ cup
  • Egg – 1 no
  • Honey – 3 tbsp
  • Unsalted butter – 1 cup

Preparation:

  • Take maida/all-purpose flour and salt in a wide mouth bowl, mix them well with your hands.
  • Grate 6 tbsp of butter to the bowl, crumble the flour along with the butter, until the flour reaches crumbling stage.
  • Pour in the buttermilk and mix well with your hands.
  • Pour in the club soda and mix well to form a dough.
  • Fold the dough well 5 to 6 times to get a proper ball shape.
  • Beat an egg in a bowl, whisk it until it becomes fluffy.
  • Preheat oven to 180 degree C. Grease a baking tray.
  • Gently spread the dough evenly all over the tray, cut it to square or rectangular pieces, brush it with the whisked egg.
  • Bake for 15 to 20 mins at 180 degree C or until it fluffs and starts turning golden brown.
  • In a bowl, take the 1 cup of butter, pour in the honey with a pinch of salt and beat it well, until they are combined.

Serve warm with Honey Butter. Bring this room temperature and store them in an air-tight container for almost and refrigerate it. Stays fresh for month time.

Oreo Truffle

Valentines Day is nearing, thought of preparing something that everyone including my kids would love to have. Got to see two packets of oreo biscuits in my kitchen, but I don’t want to prepare Oreo cake, but thought of preparing something different and this resulted in this OREO TRUFFLE.

Ingredients:

  • Oreo Biscuit – 20 nos
  • Cream Cheese – 2 tbsps
  • White chocolate – 150 gms
  • Red food colour – ½ tsp
  • Sugar strands – 2 tbsps.

Preparation:

  • Take the oreo biscuits in the blender, blend it well to a fine powder.
  • Add in the cream cheese and blend it for a min.
  • Transfer it to a wide mouth bowl, roll it to a ball.
  • Divide it to small portions, spread a butter paper over the workspace.
  • Place a small ball, pat and spread it to a circle, cut it with heart shaped cookie cutter.
  • Remove it carefully to a plastic plate, continue with all the balls.
  • Heat 3 to 4 cups of water in a heavy bottomed kadai, grate the white chocolate, and transfer it to a bowl along with the food colour.
  • Keep the bowl in the center of the boiling water, keep on stirring until the chocolate melts.
  • Remove the bowl carefully, dip the heart shaped oreo biscuits to the chocolate, and be sure it is coated well.
  • Sprinkle sugar strands over the chocolate and refrigerate it for an hour.

Yoyo Biscuit / Custard Biscuits

Long ago I got this recipe in a Cookery show by Chellam Gopalakrishnan, I love all her recipes, from the way she describes the making of the dish, and one could feel her love, dedication towards food. I started baking frequently only after watching her cookery programs. This one was my family’s favourite biscuit from my hands. I bake this very often, since it’s very easy to bake and needs very less ingredients.  A perfect tea time snack. Let us move on to the recipe…

As it’s Friday, I am taking it to Fiesta Friday #79 hosted by Angie@thenovicegarderner.

Ingredients:

  • Butter – 200 gm
  • All purpose flour / Maida – 200 gm
  • Powdered sugar – 100 gm
  • Custard powder – 60 gm
  • Salt – a pinch

Making of Yoyo Biscuits / Custard Cookies –

Preparation:

  • In a bowl, sieve all purpose flour/maida and custard powder.
  • Bring the butter to room temperature.
  • Add in the powdered sugar to the flour and mix it well.
  • Add in the butter and stir it well with your hands, until it comes to the folding consistency.
  • Leave it to rest for 5 mins.
  • Preheat the oven to 180 degree C.
  • Grease a baking tray with butter and dust it with all purpose flour.
  • Now divide the dough into small portions and roll them to small balls and flatten with your hands.
  • Place the biscuits one by one gently and continue baking at 180 degree C for 4 mins or until it starts browning.
  • Leave it to cool (room temperature) in the tray for 10 mins.

Serve hot with Coffee, tea or milk. A perfect tea time snack for kids.
