When I see everyone posting their resolutions and was asked to blog about my resolutions and happenings in last year. First I would like to say that, I don’t make any resolutions, somehow I believe that when I plan to execute things, it never happens (how hard I try) may be I would fall sick or someone in home or problem with my laptop or personal issues. Even if it happens it might not meet my satisfactory level. Apart from all these thought of following some things that I like to, may be this would be the resolution or my desire in life.

Happy New year 2017 from Madraasi

About last year – Last year was wonderful and good to me in my blogging world. I got invite for events where I got to meet celebrities – Australian Master Chef. George Colambaris, Indian Master Chef. Sanjeev Kapoor, Master Chef. Shaun Kenworthy and Master Chef. Abhijit Saha. It felt like flying in the sky and that was a “PINCH ME MOMENT” for me.

Kitchen Connection – it was an online platform where I was given an opportunity to teach my recipes all over the world. Also there was a desire to do video recipes, where I created my YouTube account by 2014 and this kitchen connection was been a great motivation in bringing my channel live.

Food Revolution by Jamie Oliver – Joined Jamie Oliver’s Food Revolution as an Ambassador, also got to opportunity to collaborate with them and it’s been and being a proud moment for me. I have been working with many brands not only the food brands but also with home interiors, things related with kids as a parenting blogger where I got to recognized as a LIFESTYLE blogger and also few travel based clients based on food and travel with hotels and restaurants, online hotel platforms. Happiest thing was my YouTube Channel – MADRAASI where I got to share my video recipes; it’s been just 4 months but got wonderful and lovely response. Do like and subscribe with us for easy and simple VIDEO recipes.

A Home Chef event with Eastern Condiments at my home discovered the tutor in me and let me know that I can teach my recipes.

I also got to design a Beautiful visiting card for me as a Madraasi, never expected all these would happen, when I started my life as Housewife a decade back.

Coming to the blog through which I got connected with few wonderful people who has been my inspiration, motivation, energy booster,  support and would love to mention the name of a person among them – Geeta Sridhar who I address as Akka (elder sister), the way she smiles, works for society everyone should learn from her – a pride of WomenHood.

Worst part in last year – At the same time, also met the worst part of my blogging life and got to know that even people are ready to kill someone if they get something in blogging which involves copying, critizing fellow bloggers. Also experienced some strange things like getting added (unknowingly) to WhatsApp group and was thrown out as not being active (funny).

Social Media – Coming to social media, last year to be frank I was doing good with all my social media handles, but faced few bad experiences through Facebook and WhatsApp because of few people who loves the word “NEUTRAL” and I am frank to say that I am not “NEUTRAL” and don’t ever want to be “NEUTRAL” but love to be honest, faithful, trustworthy, positive, encouraging and friendly person.  My Instagram, Twitter, Pinterest which made me get connected and connecting with wonderful people. From the experience got through my Facebook and WhatsApp – I got to learn many things, which would help me survive in this blogging world.

Dream Came True – Apart from all these things, 2016 was being my dream came true year, as learnt stitching. I love being fashionate right from my childhood, but somehow it took these many years for my dream to come true. I did my basic stitching course where I got to learn the basics of stitching.  Happy, I got to stitch few varieties of frock and skirts for my daughter. Hopefully I will be heading to the next level in next couple of months.

Tender Coconut Custard

This is my next share about my adventure with food, so called foodventure –Dessert with Twist. I hate summers, but like the nature produce at summer. As a foodie, I like to explore and give a try to all the fruits and veggies, gifted by nature and at times I too develop a healthy coolant recipe with no artificial flavoring or artificial essence. I like to have tender coconut, on summers right from my childhood. But whenever I have tender coconut, I would demand for the tender coconut meat, when I found it glassy and thin I would like to have it. Incase if it’s hard and thick, I would never have it.

This things happens right from my childhood, but now after developing few culinary skills, I thought why we don’t try something with this tender coconut meat. This time when I had tender coconut, I got the tender coconut meat home, and was wondering what to prepare with this. Just like that went and checked my refrigerator and found summer special fruits lying there. It was apple, plum and banana and whenever I have apple and banana at home, I go for fruit custard which I love to the core and would say my anytime favorite dessert.

And now hope you all would have caught what my mind says, yes my mind wants me to try Custard with the Tender coconut meat. I very well knew that once the tender coconut meat gets grinded with milk or tender coconut water, it would retain a thick and fluffy texture. And so now I am into action, as told in the previous post – Let me share my adventure with food with #Foodventures, conducted by Axis Bank Dining Delights where the best foodventure will get a chance to dine with Michelin Star Chef – Vikas Khanna and Food Connoisseur Vir. Let me now share my recipe…

Ingredients:

  • Tender coconut meat / Yelaneer Thengai – 2 nos
  • Milk – ½ cup
  • Sugar – 1 tbsp
  • Agar-agar – a fistful
  • Mixed fruits (pomegranate, apple, papaya, watermelon) – 2 cups

Preparation:

  • Drain all the water and take only the tender coconut meat in the blender. Blend well to a fine paste.
  • Pour in the milk along with sugar and blend them well to a fine paste.
  • Meanwhile wash the agar-agar in running water (until it becomes soft).
  • Boil the water, add in the agar-agar and continue until it gets dissolved in water.
  • Remove from flame, bring it to room temperature.
  • Pour it to the tender coconut paste, continue blending it to fine paste.
  • Pour it to bowl, refrigerate it for 5 hrs.
  • Peel and finely chop the fruits. In a glass bowl, start layering the fruits one by one and top it with tender coconut custard.
  • Refrigerate for 20 to 30 mins.

Review – Snack Shop

Today I am going to share you all about a snack shop near to my hometown, which has fantastic flavors, delectable taste, well-textured snack, also not to miss this too many varieties of both sweets and savories. Usually the village, “ERAL” is famous for its KARASEV, but here we get all the southern Indian’s snack items.

There are few shops in the village, but we buy from a particular shop T.Thangapandian Mittai Kadai, also this shop is very easy to find because of the location. This shop is located on the Highway from Tuticorin to Madurai, at Keela Eral.

Right from my childhood, we use get snacks from this village. Since our family is from business background, our family members use to travel out of the town at least once in a week, so on the way back to our hometown they use to buy snacks from this shop.

Not only from my childhood, even now whenever we are to our hometown we use to buy all the varieties of snacks includes both sweet and savory from this shop. We do not get in small quantity; we use to purchase it for a month, as they prepare all the snacks by themselves these savories stay fresh for almost two months when stored in an airtight container and not miss the sweets they too stay fresh when refrigerated for a week.

My son munches that KARASEV every now and then, also once when starts our journey towards Bangalore from Tuticorin, my kids remind their dad that we need to buy snacks from the snacks shop.

I love list few varieties of savories – KARASEV, OMAPODI, KARABOONDHI, MIXTURE, MURUKKU and so on and few varieties of sweets – SWEET BOONDHI, ADHIRASAM, CHILLUKARUPATTI, SEENI MITTAI, KARUPATTI MITTAI, JANGIRI, HALWA, LADDU, KADALAI MITTAI and so on. These are our favorites, which are must in our list.

Not only in that place, but they distribute their snacks across few states, I have heard they distribute to Bangalore. So guys when we get to come through the Tuticorin-Madurai, never miss this shop.
