Spicy Egg Masala

This spicy Egg Masala is my all-time favorite, my mom use to prepare this very often, mostly she accompany this with variety rice like coconut rice and lemon rice. My kids and their friends, my hubby and his colleagues ask me for this dish whenever they come to our home.

Everyone could try this out, just as a change of having simple boiled egg. It tastes delicious, spongy and spicy. I have tried this with usual onions, but when prepared with small onions (sambhar onions / shallots) increases taste to the masala.Let us move on to the recipe…

Spicy Egg Masala

Ingredients:

  • Mustard seeds – ¼ tsp
  • Split Blackgram – 1 tsp
  • Curry leaves – a sprig
  • Cumin seeds – ¼ tsp
  • Hard boiled eggs – 5 nos
  • Onions – 3 nos
  • Chili powder – 1 tsp
  • Cumin powder – 1 ½ tsp
  • Turmeric powder – ¼ tsp
  • Salt to taste
  • Oil – 2 tbsp

Preparation:

  • Peel and thinly slice the onions (lengthwise).
  • Heat oil in a kadai, add mustard seeds, split blackgram, cumin seeds and curry leaves. Wait till they crackle.
  • Add in the onions, cook till they turn transparent.
  • Add in all the spice powders along with salt and cook until the raw smell goes off.
  • Chop the boiled eggs into 4 equal pieces (lengthwise).
  • Add the chopped egg pieces into the masala and stir gently so that the eggs would not separate.
  • Cook for 2 mins in low flame, until the egg gets blend with masala.
  • Remove from the fire.

Serve hot as side dish for variety rice and biryani.

Spaghetti with Brain and Egg Masala

When I was about to prepare dinner, kids want me to do something innovative with spaghetti. Just like that opened the refrigerator found out 3 pieces of lamb brain lying inside, so decided to plan my dish with it. I kept on hunting recipes, but nothing satisfied me. Finally I got an idea and decided to proceed in that way. The outcome was yummy, moist, well coated spaghetti with brain and egg masala. Let us move on to the recipe…

Spaghetti with Brain and Egg Masala

Spaghetti with Brain and Egg Masala

Ingredients:

  • Lamb Brain – 3 nos
  • Spaghetti – 200gms
  • Eggs – 2 nos
  • Onion – 1 nos(medium sized)
  • Fennel / Sombu seeds – 1 tsp
  • Cumin / Jeera seeds – 1 tsp
  • Carom / Ajwain seeds – ¼ tsp
  • Garlic – 2 cloves
  • Soy sauce – 1 tsp
  • Green chili sauce – 1 ½ tsp
  • Tomato sauce – 1 tsp
  • Olive oil – 1 tbsp
  • Black salt – ¼ tsp
  • Black pepper powder – ½ tsp
  • Salt to taste

Preparation:

  • Boil spaghetti, drain it and sprinkle olive oil. Mix them well.
  • Dry roast cumin, carom and fennel seeds and grind them to a fine powder. Keep them aside.
  • Finely chop the onions, lamb brain and garlic.
  • Heat 2 tsp of oil in a kadai. Add ¼ tsp of cumin seeds, wait till they crackle.
  • Add the onions, garlic and cook till they turn golden brown.
  • Add in the finely chopped brain followed by little salt and the ground masala powder.
  • Cook them till the raw smell goes off. Break in the eggs and add salt, pepper powder. Cook till the eggs are half done.
  • Pour in the soy sauce, chili sauce, tomato sauce and the leftover grounded spice powder. Cook till the raw smell goes off.
  • Add in the spaghetti, black pepper powder, black salt and stir them well with brain mixture, till the spaghetti gets coats with the masala and the raw smell goes off.

Serve hot with mayonnaise and tomato sauce.

500th POST – Spicy Shahi Egg Masala

A very easy, less time consuming with a common basic ingredient (EGG), attractive color (brown), very good texture (thick), very attractive (Color), wonderful aroma (blend of spices),  delicious (spices and egg) – It’s my 500th post “SPICY SHAHI EGG MASALA”. Thanks all for your support and do support me 🙂

This Egg masala goes out well with variety rice, Briyani’s and pilaf (pulav). Also it goes out well with any Indian Bread. My son being an all time favorite of egg, made me try out different egg recipes. The boiled egg when get induced in this masala, it gives out a very good taste, aroma and also its color attracts everyone. Let us move on to the recipe…

Spicy Shahi Egg masala

Spicy Shahi Egg masala

Ingredients:

  • Hard Boiled Eggs – 5 nos
  • Onions – 3 nos(medium sized)
  • Turmeric powder – ½ tsp
  • Salt to taste
  • Red chillies – 4 nos
  • Shahi Jeera – ½ tsp
  • Coriander seeds – 1 tsp
  • Cumin seeds – 1 tsp
  • Fennel seeds – 1 tsp
  • Garlic – 6 cloves
  • Ginger – 1 “ inch stick
  • Cardamom – 1 no
  • Peppercorns – ½ tsp
  • Cloves – 3 nos
  • Cinnamon – 1”inch bark
  • Oil – 1 tbsp
  • Lemon juice – 1 tsp

Preparation:

  • Heat a tsp of oil in a kadai. Add in the cumin, fennel, coriander seeds, red chilli, cloves, shahi jeera, cinnamon, cardamom, peppercorns, ginger and garlic and cook till the raw smell goes off.
  • Bring them to room temperature and grind it to a fine paste by adding little water.
  • Finely chop the onions.
  • Heat oil in a kadai, add ¼ tsp of cumin seeds and curry leaves. Wait till they crackle.
  • Add the onions and fry till they are transparent.
  • Add the turmeric powder, ground masala and salt. Cook them till the raw smell goes off.
  • Pour in a cup of water, let it boil.
  • Slit the boiled eggs and add them in the masala, cover and cook till the masala thickens.
  • Pour in the lemon juice, stir and cook for 2 mins.
  • Transfer it to a bowl and garnish with finely chopped coriander leaves.

Note: Gently slit the sides of the eggs. Make sure that the eggs should not break while stirring.
