Most precious day in my life – It’s my Hubby’s Birthday. There are too many difference in living with a man and a gentleman, I would say that I am the most blessed soul when it comes to my hubby and kids and glad that I am living with a Gentleman.

Happy Birthday to My Hubby – 2017

Every time in his birthday’s I use to say, he strives hard to replace my grandfather, but this time I would say that he stole that place. Among too many chaos and struggle, the only one (GENTLEMAN) who understands me very well and travelled, travels and loves travelling with me by accepting, respecting, admiring, boosting the way I am. Usually I say these words in my own pride, “I am perfect in my own way that I was taught to be and wish, wanted to be”, but there was a time recently when I was totally down, still with tons of thoughts bursting in both mind and heart. He who told the same words with the bold, loving, encouraging voice – “You are perfect – IN OUR WAY, don’t ever bother of other’s, OUR LIFE is OURS – LET US LIVE OURS to the fullest”.

My life to me is not in words, but a biggest Struggle, I am pretty much sure that no one would travel with me for years, but he the who one and only reason for where and what I am today. Wish him a VERY VERY HAPPY BIRTHDAY with loads of happiness by holding (him) – the world best with the PRIDE – Love you loads Dear.

My life with you is more beautiful, lovely, happy, best in the world, which no one can have.

Butter Chicken Gravy / Restaurant Style Butter Chicken – Diabetic Friendly

As I have been compiling Diabetic Friendly recipes for my Diabetic Hubby (type -2) from my grand ma, mother and friends, sometimes I too create. But being diabetic is not about omitting sugar, but the it purely depends on the quantity/portion of the food we consume. Being a food blogger, I could never imagine of creating a recipe based with nutrition, calories so and so, but now I would say my dream came true. As a start, I love to try and share a Non-Veg recipe which I have been suggested by few of my readers – Butter Chicken Gravy. Butter Chicken is a north Indian dish, but loved by everyone right from the kid to the elder. They can be served as lunch, dinner with nan, roti, paratha and fried rice. Because of their richness, they can be served for festivals, guests and simply for our family. Butter Chicken / Butter Chicken Recipe / How to prepare Butter Chicken – Diabetic Friendly Version

Ingredients:

  • Boneless Chicken – 400 gms
  • Lemon Juice – 1 tsp
  • Kashmiri Red chilli powder – 1 tsp
  • Salt to taste
  • Butter
  • For Marinate
    • Hung Curd – ½ cup (Click here for HomeMade Hung Curd recipe)
    • Ginger paste – 2 tsp
    • Garlic paste – 2 tsp
    • Kashmiri Red chilli powder – ½ tsp
    • Garam Masala – ½ tsp
    • Mustard Oil – 2 tsp
  • For Makhni Gravy
    • Butter – 2 tbsp
    • Green cardamom – 2nos
    • Cloves – 2 nos
    • Black peppercorns – 3 nos
    • Cinnamon – 1 inch piece stick
    • Ginger – 1 tsp
    • Garlic – 1 tsp
    • Tomato Puree – ½ cup
    • Red chilli powder – ½ tsp
    • Sugar – 2 tbsp
    • Kasoori methi / Dry Fenugreek Leaves – ½ tsp
    • Fresh cream – ½ cup

Making of Butter Chicken (Diabetic Friendly) –

Preparation:

  • Clean the chicken and cut them medium size.
  • In a bowl, add Kashmiri red chilli powder 1 tsp, lemon juice – 1 tsp, salt and mix it well. Marinate for 15 to 20 mins.
  • After that, add the ingredients given under the marinate list to the chicken and mix it well. Marinate it for 2 to 3 hrs.
  • After 2 to 3 hrs, add a tbsp of butter in a grill pan and grill the chicken or tandoor the chicken in microwave.
  • Cook the chicken only for 90% and remove the chicken from the fire.
  • Add a heavy bottom vessel or a non-stick vessel, add the leftover butter, add the spices (cardamom, cloves, peppercorns, cinnamon) and wait until they crackle.
  • Add the leftover ginger paste and garlic paste, cook for a min.
  • Pour the tomato puree, cook for a min.
  • Add the kasuri methi or dry fenugreek leaves, cook for few seconds and pour a cup of water.
  • Add little salt and bring it boil, cover and cook until the butter starts separating from the gravy.
  • Add the chicken pieces and cook until the gravy thickens and oil floats on the top.
  • Pour the fresh cream, give a mix and cook for 2 mins.
  • Remove from fire.

Serve hot with any Indian flat breads or pulav’s or fried rice.

Hung Curd / Hung Yogurt / HomeMade Hung Curd / Thick Curd

Hung Curd is nothing but the curd is made to hang in a cloth, which helps in draining all the water and only the thick portion of the curd stays there, which can be used for variety of dishes. Most of them think this a very difficult process and buy packed ones, but this process is very easy. It consumes little time, when you are in need of hung curd you can prepare them the day before and store it in refrigerator. Let me share the recipe, also don’t forget to check out the video…

Hung Curd

Ingredients:

  • Curd / Yogurt – 1 cup
  • White cloth
  • A small bowl

Making of Hung Curd / Hung Yougrt / Thick curd at home –

Preparation:

Spread the cloth over a bowl or shallow plate, pour the curd/yogurt over it, bring all the edges of the cloth together and squeeze out the water. Tie the cloth with the thread and hang it over or you can hang it in refrigerator by placing a bowl or a shallow plate below the cloth to avoid the water splitting. Hanging in refrigerator avoid the curd getting more sour in taste.
