Lemon Ice Tea

As I have shared in my earlier post that my hubby likes Ice Tea to the core, and this Lemon Ice Tea being his all-time favorite after a fantastic and heavy meals. Beautifying my summer meals with a flavorful, aromatic and yummilicious Lemon Ice Tea.

Lemon Iced Tea

Lemon Iced Tea

Ingredients:

  • Lemon – 5 nos
  • Sugar – 3 tbsp
  • Tea powder – 3 tsp
  • Ginger – 1 “inch stick – 2 pieces
  • Cardamom – 1 no
  • Mint – 2 sprigs

Preparation:

  • Take 2 cups of water in a bowl, along with sugar, keep in medium flame and cover with the lid.
  • Halve the lemon and squeeze out the juice, keep it aside.
  • Wash and separate the 5 to 7 mint leaves from the sprig and keep it aside.
  • Bring it to boil, once starts boiling crush the ginger and cardamom, add it to the boiling water along with the separated mint leaves.
  • Cover and cook for 2 mins, remove from fire, add in the tea powder, cover with the lid and let it rest for a min.
  • Filter the tea and keep it in a separate glass.
  • Take a glass, drop a long sprig of mint, add in the ice cubes, pour in ½ cup of tea, 1 tbsp. of lemon juice and ¼ cup of water and garnish with lemon wedges.

Serve chilled.

Note: You can add increase or decrease the quantity of lemon juice and sugar, as per your taste buds.

Ginger Banana Bread

As I have told last week, that I wish bake daily a cake or cookie or bread, but unfortunately last week both of kids were down with viral fever and now it’s me with high fever. Unlucky me, but still I hope I could bake atleast once in two days. Stay TUNED.

When I was searching for a bread recipe, I found out this Ginger Banana Bread. But I thought of inducing spices to bread, so did it.

The bread was yummy, spongy with little spicy taste in it. The quantity of spice powder depends on your taste buds, but when you add more the quantity of spices in it, I hope it won’t be like a bread. Let us move on to the recipe…

Ingredients:

  • All-purpose flour – 2 cup
  • Baking soda – ¾ tsp
  • Salt – ½ tsp
  • Ripe Bananas – 3 nos or 1 cup
  • Sugar – 1 cup (brown sugar or powdered jaggery)
  • Butter – ¼ cup
  • Eggs – 2 nos
  • Plain yogurt (buttermilk) – 1/3 cup
  • Vanilla essence – ½ tsp
  • Ginger powder – 1 ½ tbsp.
  • Cinnamon powder – 1 tsp
  • Cloves powder – 1 tsp

Preparation:

  • Sieve the all-purpose flour along with baking soda, salt, cinnamon powder, ginger powder and cloves powder. Keep it aside.
  • Peel and mash the bananas, no lumps should be formed.
  • Break eggs in a bowl, add in butter, sugar and mashed bananas. Beat well until all blend together.
  • Pour in the plain yogurt, vanilla essence and beat them well until everything blends together.
  • Grease the bread the tray and preheat the oven to 180 degree C.
  • Add in the all-purpose flour little by little to the banana mixture and fold it (no lumps should be formed).
  • Pour in the batter to the bread tray and bake it for 10 mins or until the toothpick inserted in the bread comes out clean else bake for few more mins.

Serve hot or at room temperature.

Ginger Drink

I never use to have ginger drink right form childhood even after knowing the benefits of having ginger drink. But finally only when we face some problems we suddenly search of a remedy that to a natural remedy to relieve us or keep away from the problem.

This ginger drink helps and relives indigestion, cold. Ginger Drink is prepared in few version, but this one is the simple and good for kids, which is mild spicy. It’s not good to have this drink often, one can have it once in a month, perfect for adults to have in empty stomach and good for kids after a milk or coffee in morning. Also it’s enough for one to consume only ¼ cup (100 ml), so it’s good to have on weekends.

Ginger Drink

Ginger Drink

Ingredients:

  • Ginger – 100 gm
  • Palm Rock Sugar / Panakarkandu – 10 gm
  • Ajwain / Carom seeds / Omam – ¼ tsp

Preparation:

  • Peel and chop the ginger into fine pieces.
  • Heat ¼ litre of water in a small pot, wait until it boil.
  • Add in the ginger pieces, palm rock sugar and carom seeds, cover with the lid.
  • Allow it to boil for 10 -15 mins in medium flame.
  • Remove the lid and filter the water.

Serve hot or at room temperature.

Note: You can adjust the quantity of palm rock sugar by increasing its quantity in order to increase the sweetness in it.
