Like I shared last year Why India is Unique from all the other countries – It’s one and only “Unity In Diversity”, how many of us agree that still we keep up the unity in diversity in mind – few of us right. Wish everyone one of us to respect, follow and to share thoughts more and more about unity in diversity among us.

As a food blogger, last year it was Tricolor Kesari and two years back it was Tricolor Sandwich and this year 2017 sharing a Tricolor Instant Rava Dhokla, give a try…

Dhokla topped with sweet water tempering – Instant Rava Dhokla recipe / Instant Dhokla recipe / Tricolor Dhokla recipe – Independence Day Special

Preparation Time – 10 mins

Cooking Time – 20 mins

Serves – 4 nos

Ingredients:

  • Rava / Semolina / Sooji – 1 cup
  • Sour Curd – 1 cup
  • Water – 1/3 cup
  • Eno (original flavor) / Cooking soda – 1 tsp
  • Cooking oil – 1 tsp + 1 ½ tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Green chilli – 1 no
  • Curry leaves – a sprig
  • Salt – ¾ tsp (as per your taste)
  • Sugar – 2 tsp
  • Food color (orange and green) – ¼ tsp each
  • Lemon juice – 1 tsp

Preparation:

  • Take rava/semolina/sooji, Eno, sour curd, salt all together in a bowl, mix them well by pouring water little by little and make sure no lumps are formed.
  • Let it rest for few mins, meanwhile boil water in a steamer or idli vessel.
  • Divide the dhokla batter to three equal portions, add orange food color to one portion and green food color to the other portion. Mix it well.
  • Grease the dhokla mould with oil, pour the batter, first orange, then white and later green as the three portions.
  • Place the mould in the stand and steam it in the steamer for 15 mins or until the dhokla is cooked (spoon inserted in the middle of the dhokla should come out clean).
  • Meanwhile, heat 1 ½ tbsp of oil in a pan, add mustard, cumin seeds and curry leaves, wait until they crackle, add the slit green chili and cook for a min.
  • Add sugar and pour water and a tsp of lemon juice, bring it to boil for 3 mins and remove it from fire.
  • Remove the dhokla gently to a plate, pour the tempered sweet water over the dhokla.

Serve hot.

Independence Day – Tricolor Kesari

After a tour and being very tired, also was sick. Thought to prepare something for the Independence Day – August 15th.

India is known for its “Unity in Diversity” – as there are many states, each and every states has too many classes of people and there differs everything from Food till the slang the language of based on the region. Still there exist unity apart from these Diversity through our National Flag, National Anthem, and most probably we are Indian wherever we go.

Rava Kesari – Independence Day

So took the concept of National Flag for the IFB Unity in Diversity contest. Kesari not only mine but also my families all time favorite dish, was taken into consideration. Made three colors of Kesari – Saffron using Saffron food color, Green using green food color, White without any color and then some fried Black raisins to represent the blue (chakra) of our National Flag.

Recipe for Kesari (Substitute food colors, during preparation)

Ingredients:

  • Rava/Semolina/Sooji – 1 cup
  • Ghee – 1 tbsp
  • Water – 2 cups
  • Sugar – ¾ cup
  • Cashew nuts – 10 nos
  • Raisins – 10 nos
  • Food Color (Red and Green) – ¼ tsp

Preparation:

  • When you use non roasted rava, dry roast rava/semolina till it changes to golden brown colour and bring it to room temperature.
  • Bring the water to boil in a kadai.
  • Add the food colour (repeat this step for 3 times for the 3 colors), when the water starts boiling.
  • Keep the flame in sim and add the rava/semolina little by little.
  • Keep on stirring continuously to ensure that no lumps are formed.
  • When almost ¾ th of water is evaporated, add the sugar and continue stirring.
  • In a tadka, heat the ghee and add the cashewnuts and raisins. Fry till they turn golden brown.
  • Pour it to the rava and keep on stirring by dropping the ghee along the sides of the dish.
  • When it comes to consistency of getting rolled together in the kadai, Switch of the flame and transfer it to a bowl

Once prepared aasemble all the three colors kesari one by one in a square box and then tilt them to a plate, insert 2 to 3 fried Black raisins for the chakra.

Also loved to say something here – Independence is got after too many losses, but we are born lucky to be independent. But now there are too may issues, why not we all put little efforts to enjoy and make the nation more healthy. Happy Independence Day to all Indians.

Tricolor Sandwich

Here is my tricolor sandwich for both Independence day and Republic day. Give a try and enjoy the dish.

Tricolor Sandwich

Ingredients:

  • Bread slices – 4 nos
  • Grated carrot – ½ cup
  • Grated cheese – ¼ cup
  • Mayonnaise – ¼ cup
  • Green peas – 3 tbsp

Preparation:

  • Boiled and mash the green peas, make sure they should be in paste consistency.
  • Preheat the oven to 180 degree c.
  • Half the bread to triangle shape.
  • Spread mayonnaise on the bread and sprinkle grated carrot on it.
  • Spread mayonnaise on the other bread slice and sprinkle the grated cheese on it.
  • Spread mayonnaise on the other bread slice and place the mashed peas over it.
  • Now place all these bread slices one by one according to our Tricolour flag and bake it for 4 mins.

Serve hot with Tomato sauce or mayonnaise.

Note: Also you could have this sandwich without baking.
