Mutta Curry / Egg Roast / Egg Gravy

Ingredients:

  • Egg / Muttai – 4 nos
  • Onions – 200 gms
  • Tomato – 100 gms
  • Green chilli – 1 no
  • Chilli powder – 1 tsp
  • Coriander powder – 2 tsp
  • Turmeric powder – ¼ tsp
  • Garam Masala – 1 ½ tsp
  • Cumin powder – 2 tsp
  • Garlic cloves – 7 nos
  • Ginger – 1 “inch piece – 1 no
  • Curry leaves – a sprig
  • Salt to taste
  • Coconut oil – 2 ½ tbsp.

Making of Mutta Curry / Egg Gravy / Egg Roast –

Preparation:

  • Boil the eggs, de-shell them, and also give small slits over the eggs.
  • Peel and thinly slice the onions.
  • Finely chop the tomatoes and slit the green chilli to halves.
  • Finely chop the ginger and garlic.
  • Heat oil in a kadai, add curry leaves and wait until they crackle.
  • Add the ginger-garlic pieces and green chillies and cook until the garlic turn golden brown.
  • Add the thinly sliced onions and cook until they turn golden brown.
  • Add the finely chopped tomatoes and cook until they turn mushy.
  • Add all the spice powders along with salt and cook until the raw smell goes off.
  • Pour a cup of water, bring it to boil and then add the eggs to it.
  • Cover and cook for 2 mins, remove the lid, turn the side of the eggs, cover and cook for another 2 mins.
  • Remove the lid and cook in medium flame, until it reaches the consistency you desire may be gravy, semi-gravy or dry.

Serve hot with Idiyappam, appam, idly, dosa or bread.

Bread Omelete is one of the street food, recently I have come across this bread omelet in a Television. This resulted me to give a try at home. An easy, healthy and fast breakfast for weekdays and lazy weekends. Let us move on to the recipe…

Bread Omelete with Chicken Sausage

Ingredients:

  • Bread slices – 8 nos
  • Eggs – 6 nos
  • Curry Masala powder – ½ tsp
  • Pepper powder – ½ tsp
  • Salt to taste
  • Oil – 2 tbsp
  • Tomato sauce – 2 tbsp
  • Butter – 2 tbsp.

Preparation:

  • Break the eggs in a blender and add in the curry masala powder, pepper powder and salt.
  • Blend it for a minute.
  • Transfer it to a bowl.
  • Heat a tsp of oil in pan, spoon the egg mixture in the pan, twist the pan so that the egg coats all over the pan. Keep in low flame.
  • Place two bread slices over the egg mixture and suddenly flip the bread slices, leave it for a min.
  • Gently lift the sides of the egg and fold over the egg, place ½ tsp of butter over the bread slices.
  • Now fold the bread one over the other and swap the sides and cook for a min.
  • Remove from the pan.

Serve hot with Tomato sauce.

Brain Omelette / Moolai Omelette

As already discussed in the previous post everyone including kids like this goat/lamb brain and I shared few brain recipes like brain omelette, scrambled brain, Spaghetti with Brain masala, Brain masala and Brain Fry followed by these here comes my another Brain recipe – Brain omelette Version-2, since the first version consumes more time to cook, the second version takes less time compared to the first one. The only difference here is I have ground the brain along with egg.

It should be served hot, so that it would be soft, spongy and melts in the mouth. Let us move on to the recipe…

Brain Omelette / Moolai Omelette

Brain Omelette / Moolai Omelette

Ingredients:

  • Brain – 3 nos
  • Egg – 5 nos
  • Onions – 2 ½ nos
  • Coriander leaves – a handful
  • Curry Masala / Garam Masala – 1 ½ tsp
  • Turmeric powder – ½ tsp
  • Chili powder – ½ tsp
  • Salt to taste
  • Oil – 2 tbsp

Preparation:

  • Clean and roughly chop the brain into medium pieces.
  • In a blender, break the eggs, add in the brain pieces, followed by little salt, turmeric powder, curry masala/garam masala, chili powder and blend well until it’s fluffy.
  • Peel and finely chop the onions and coriander leaves. Keep it aside.
  • Pour in the grounded mixture to a bowl, add in the onions and coriander leaves. Stir it well.
  • Heat a tsp of oil in a pan, spoon in the grounded mixture with spoon, spread it lightly.
  • Drizzle a tsp of oil around the omelette and cover with the lid, cook in medium flame.
  • Wait for 3 min, remove the lid, swap the side and cook by covering with lid for another 3 mins.

Serve hot as side dish for lunch or for dinner.

 Note: Cook only in medium flame or low flame, else the omelette would be burnt and uncooked.
