Nachos are a snack food from Mexico, and now been popular among all parts of the world. Nachos are served as starter with a layer beans, veggies, non-veg with a variety of dips. Not only its me but my family like nachos to the core, and this was one long wait to try recipe in my list and finally done today.

Nachos was very easy, simple and consumes very little time to prepare with the combination of Maize flour, maida/apf and salt. No one would say no to this Nachos chips, as this goes out well as munch even with plain coffee or tea. Let me share the recipe…

Nachos Chips / Home-made Nachos Chips

Ingredients:

  • Maize Flour / Corn Meal – 1 cup
  • Maida / All-purpose flour – ¾ cup
  • Red chilli powder – ½ tsp
  • Carom (ajwain/omam) or Oregano – ½ tsp
  • Salt to taste
  • Oil for deep frying

Making of Nachos / Nacho chips –

Preparation:

  • In a wide mouth bowl, take corn meal, maida/all-purpose flour, red chilli powder, carom seeds and salt all together.
  • Mix it well.
  • Pour water little by little and start kneading the flour and roll out to a dough.
  • Take a small portion of the dough, dust the working space, flatten the dough and cut them to the right shape (check out the video).
  • Meanwhile heat the oil in a kadai, gently drop the nacho dough one by one and continue cooking.
  • Cook only in medium flame (otherwise it would turn out to dark brown in color).
  • Flip the sides, cook on both sides until they start turning golden brown.
  • Drain the oil and remove them from fire.

Store it an air-tight container once it reaches the room temperature. Stays fresh for a week time.

 

Cinnamon Tea

I like to have tea without milk, recently have tried out cinnamon tea and found good difference in our health. A very, simple and easy to prepare but with loads of health benefits. As most of us knew that cinnamon is good for Diabetics and honey with warm water cuts bad cholesterol and helps in relieving acidity. I got to infuse both these ingredients together as tea which should be taken early morning in empty stomach and 30 mins after dinner before going to bed.

Cinnamon Tea

Cinnamon Tea

Ingredients:

  • Tea powder – ¼ tsp
  • Honey – 5 tsp
  • Cinnamon – ½ inch stick – 1 piece

Preparation:

  • Heat water in a vessel, bring it to boil.
  • Add cinnamon stick, cover and allow to boil for another min.
  • Remove the vessel from flame, sprinkle tea powder, cover and let it rest for another 2 mins.
  • In a glass, take 2 ½ tsp of honey, strain the tea and stir it well with a spoon (honey should get dissolved in the tea).

Serve hot.

Corn Cheese Bread Cups

As I have started preparing #afterschoolsnacks, wonder what to prepare today for snacks. Got to see a bread packet and some leftover corn kernels and cheese cubes in the refrigerator. Thought of preparing Bread cups and later it resulted in a bread bowl too. #afterschoolsnacks

When I started preparing this dish, felt little confusion whether it would work out, think may be of having migraine. But continued the process and the outcome was fantastic which made me very happy. These corn cheese bread cups disappeared in moments, my son liked it to the core. Feeding him is being a great challenge for me, what do a mother needs than this. #backtohomesnacks

It was delicious, resembled almost pizza but the taste and crunchiness of the bread made it stand away from pizza. Very simple, easy and less consumption healthy dish for kids. Let me share the recipe…

Ingredients:

  • Bread Slices – 12 nos
  • Corn kernels (boiled) – ½ cup
  • Onion – 1 no
  • Tomato – 1 no
  • Capsicum – ½ no
  • Mixed Italian herbs (oregano, chives, rosemary) – 1 tbsp
  • Cheese cubes – 5 nos
  • Tomato Sauce – 3 tbsp
  • Melted Butter – 2 tbsp
  • Pepper powder – ½ tsp
  • Salt to taste

Preparation:

  • Trim the sides of the bread slices and keep it aside.
  • Peel and finely chop the onions and tomato. Deseed and finely chop the capsicum.
  • Grate the cheese cubes and keep it aside.
  • In a bowl, take the finely chopped onion, tomato, capsicum, sprinkle the Italian seasoning along with pepper powder, salt and mix them all together. Keep it aside.
  • Preheat the microwave to 180 degree C.
  • Grease a muffin tray, brush the bread slices with butter, and gently press the bread to the muffin mould.
  • Sprinkle little cheese to the bread, then spoon in the vegetable mix, pour in a tsp of tomato sauce and top it with grated cheese.
  • Continue the same with all the breads and bake them at 180 degree C for 2 to 3 mins.
  • Remove them gently and serve hot.
  • For Corn cheese bread bowl – Take a slice of bread and cut it in the center. Now sprinkle little grated cheese over a bread slice and place the center chopped bread slice over it.
  • Add in the vegetable mix, pour in a tsp of tomato sauce and top it with grated cheese.
  • Bake it for 2 to 3 mins at 180 degree C and serve hot.

Serve hot with coffee, tea or milk.
