Minty Tomato Punch

I could hear everyone, becoming dehydrated and getting more health issues, because of summer and so now onwards let’s start Beating the heat together with healthy, yummy and refreshing juices. I have already shared few summer recipes last year – CLICK HERE for more summer recipes.

Minty Tomato Punch is a tangy, as you desire you can turn in sweet by adding sugar or salty by adding salt. A healthy juice with a combination of mint, tomato, lemon and roast cumin seeds powder, which comes with a tangy, aromatic and refreshing flavor and perfect drink for this summer. Not only for the summer, this juice can be consumed all over the year. Let me share the recipe…

Ingredients:

  • Lemon – 2 nos (medium size)
  • Tomato – 5 nos (medium size)
  • Mint – 3 strands
  • Cumin powder – ½ tsp
  • Salt to taste
  • Sugar – 3 tbsp (optional).

Preparation:

  • Clean and roughly chop the tomatoes.
  • Clean and separate the mint leaves from mint stalk.
  • Take tomatoes and mint leaves, in a mixer jar and grind them for 3 mins or until the tomatoes are ground well.
  • Add a cup of water, grind it for few mins.
  • Strain the juice and transfer the ground flesh to the mixer and grind with one more cup of water.
  • Strain the juice, sprinkle cumin powder and salt. Mix it well.
  • Add one more cup of water, mix it well.
  • Add sugar if you prefer it sweet else serve it.

Refrigerate and serve chilled or make use of cold water while mixing the juice and serve chilled. Garnish with finely chopped tomatoes and a mint leaf strand, just before you serve.

Mint IceCream

Want to beat the heat with Ice Cream, but don’t want to go outside the home, here is my No Cook, No Egg, No essence, No food color, Naturally flavored, very easy and simple Ice Cream with fresh home grown Mint Leaves (motivated by NUTTY SQUIRREL) – MINT ICECREAM.

I would say this Mint Ice cream, a perfect coolant to beat the heat. Also being a mint maniac, I liked this to the core. When it comes to Mint Ice cream, I would say the perfect amount of mint should be induced

Benefits of Home-made Ice cream: You can enhance the sweetness as per your taste buds, you can add the perfect the amount of ingredients to enrich your flavor.

Mint Ice Cream

Mint Ice Cream

Ingredients:

  • Mint leaves – 15 sprigs
  • Fresh Cream – ¾ cup
  • Full fat Milk – 1 cup
  • Sugar – ¾ cup

Preparation:

  • Boil the milk and wait until it comes to room temperature.
  • Grind the sugar to a fine powder and keep it aside or you can go for powder sugar.
  • Separate the mint leaves from the stalk, rinse in running water and keep it aside.
  • Take the mint leaves and blend them well by sprinkling a tsp of water to a coarse paste.
  • In a wide mouth bowl, pour in the fresh cream, milk and add in the sugar, whip them just for few mins until fluffy.
  • Pour in the mint paste to the bowl and whip them well for 3 to 4 mins.
  • Pour it to an air-tight bowl and freeze it for almost 8 hrs.
  • Remove it from the freezer (it looks like ice crystals), scrap it.
  • Blend all the scrapped ice (ice crystals) together along with 2 to 3 sprigs of mint leaves (if needed to enhance your taste buds).
  • Blend them nicely as it should be thick and creamy.
  • Again pour it in an air-tight container and freeze for 10 hours.
  • Remove the container from freezer, once the ice cream comes to perfect texture.

Scoop and serve chilled.

Note: You can also have ice-creams with soft and spongy cakes, I like to have vanilla ice-cream with sponge cake. I would prefer to have this mint ice-cream with coffee cake. You can adjust the sugar level (a tsp) as per your taste buds, I have induced medium level of sugar.

Mint Lassi

Already I have shared Lassi during last summer and now for this summer thought of trying something new with lassi. This year I feel that I am getting roasted when I was cooking around 1 p.m for my lunch and I wanted to have something chill chill cool cool. Thought what to cook, when I saw my balcony garden found my beautifully grown mint leaves and thought of trying out a drink with mint leaves and really I am bored of Mojito. Here resulted my idea of Mint Lassi. A perfect coolant for Indian summer.

Mint Lassi was too delicious, the only thing I felt in this drink was I should add little more mint leaves for more flavor, but kids would love only this quantity of mint leaves. Let us move on to the recipe…

Mint Lassi

Ingredients:

  • Mint leaves – 1 fistful
  • Yogurt/Curd (Chilled) – 3 cups
  • Milk (at room temperature or chilled) – 1 cup
  • Sugar – 4 tsp
  • Salt a pinch

Preparation:

  • Separate the mint leaves from the stalk, wash them well and keep it aside.
  • In the mixer, take sugar, milk, salt and mint leaves and blend them well.
  • Pour in the half the quantity of yogurt/curd, whip it for few seconds.
  • Now pour in the rest of the yogurt/curd, whip it for two seconds.
  • Transfer it to a glass.

Garnish it with mint leaves and serve chilled or at room temperature.
