Green Lentil and Sweet Potato – Protein Rich

Recently I have been blogging about some protein rich food, I have tried out many breakfast and now to the lunch. As this is rich in protein, its good for weight watchers and body builders. Protein rich Lunch – Green Lentil and sweet potato rice with Sauted Carrots n Beets and Fish Fry.

Let me share the recipe of Green Lentil and Sweet Potato…

Green Lentil and Sweet Potato

Ingredients:

  • Green Lentil / Mung Bean / Paasipayaru – 1 cup
  • Chilli powder – ½ tsp
  • Cumin powder – ½ tsp
  • Sweet potatoes – half the quantity of the green lentil
  • Salt to taste
  • Oil – 2 tsp

Preparation:

  • Pressure-cook or boil green lentils for 3 whistles (mashing consistency).
  • Pressure-cook sweet potato for 3 whistles (cubes but able to mash).
  • Heat oil in heavy bottom vessel; add the boiled mashed potatoes followed by chilli powder and Cumin powder with little salt.
  • Mash the green lentils and add them to the sweet potatoes, pour ½ cup of water, cook in medium flame by stirring once in a while.
  • Sprinkle salt and remove from fire.

For Sauted Carrot and Beet:

Peel and chop the carrots and beets lengthwise, steam them. Heat a tsp of olive oil in a pan, add the steamed carrots and beets followed by salt and pepper powder, give them a toss and transfer it to a plate.

For Fish Fry:

Marinate the Fish, with lime juice, salt and pepper powder for 30 mins, shallow fry the fish pieces and serve with onions and lemon wedge.

 

Mung Bean Ladoo recipe /Paasipayaru urundai /Whole GreenLentil Ladoo – Diwali Ladoo recipe

Rarely do I use to prepare Mung dal/Paasiparuppu/Split Greengram laddu, but one of my friend suggested me to prepare Mung Bean/Paasipayaru/Whole GreenLentil Laddu which her grandma prepares very often, because of its packed health benefits. I too tried out, and it was a very delicious and I am glad that my kids loved it a lot. Let me share one of the healthiest recipe with you all for this Diwali/Deepavali. Mung Bean Laddu / Paasipayaru Laddu

Mung Bean Laddu / Paasipayaru Laddu

Ingredients:

  • Mung Bean / Whole Green Lentil / Paasi Payaru – 1 cup
  • Sugar – ¾ cup
  • Ghee/Clarified butter – ¼ cup
  • Cardamom powder – ½ tsp
  • Cashew nuts – 5 nos
  • Almonds/Badams – 5 nos
  • Salt – ¼ tsp

Preparation:

  • Dry roast whole green lentil/paasi payaru/mung bean, until nice aroma comes out or until it starts turning brown in colour.
  • Blend cashew nuts and badam to a coarse powder and keep it aside.
  • Blend sugar to a fine powder.
  • Blend the roasted whole green lentil/paasi payaru to a fine powder and keep it aside.
  • Sieve the ground green lentil and transfer to a bowl.
  • Add in the powder sugar, powdered cashew nuts and almond mixture and cardamom powder. Mix all these together.
  • Heat ghee/clarified butter in a kadai, pour it to the flour mixture and mix it with the spoon.
  • When the heat comes down, mix it well with your hands and grease your palm with ghee and start rolling small quantity of flour to balls (laddus).

Store it in an air-tight container, so that it stays fresh for a week time.

Mung Bean KodoMillet Rice / Varagarisi Paasipayaru Sadham

Already I have posted a recipe of this Mung Bean rice, but now this is another version. Here I have used Kodo Millet / Varagarisi instead of raw rice, the taste, texture was too good and this resulted in more health conscious than this Mung Bean Rice. Mung Bean Foxtail Millet Rice / Varagarisi Paasipayaru Sadham

Ingredients:

  • Kodo Millet Rice / Varagarisi – 1 ½ cup
  • Mung Bean – ¾ cup
  • Cumin seeds – 1 tsp
  • Mustard seeds – ¼ tsp
  • Chili powder – ¾ tsp
  • Cumin powder – 1 tsp
  • Ghee / Clarified Butter – 1 tbsp
  • Oil – 2 tsp
  • Salt to taste
  • Curry leaves – a string

Preparation:

  • Clean, wash and soak the Kodo millet for 15 minutes. Drain the water and keep it aside.
  • Pressure cook mung bean with water for 5 whistles.
  • Remove the lid and add the kodomillet rice with 3 cups of water. Let it boil.
  • Add in the turmeric, chili and cumin powder along with salt.
  • Heat ghee/clarified butter and oil in a tadka. Add mustard, cumin seeds and curry leaves. Wait till they crackle.
  • Pour it to the rice. Let it boil.
  • Again pressure cook for 3 whistles. Transfer it to a bowl.

Serve hot. This goes out well with thuvayal/thogayal (sesame thogayal) and vadagam.
