Mango Lassi

Lassi is one of the refreshing, cold beverage from India. There are certain fruits used as flavoring to enhance better taste for lassi. Summer is the season of Mangoes – the King of Fruits. Everyone including from kids till elderly people likes mangoes to the core. Mango Lassi is a yogurt-based drink blended with mango pulp for flavor with a sprinkle of cardamom. Lassi being one of the most familiar and perfect drink for hot hot summers.

Mango Lasso

Mango Lassi

Ingredients:

  • Mangoes (Alphonso) – 1 no
  • Yogurt/Curd – 2 cups
  • Milk – ½ cup
  • Granulated sugar – 3 tbsp
  • Cardamom powder – ¼ tsp

Preparation:

  • Peel and roughly chop the mangoes.
  • Take mango pieces, milk, sugar and cardamom powder in a blender, blend them to a fine paste.
  • Now pour in the curd/yogurt, and whip for a min at regular intervals.
  • Transfer to a glass, top with ice cubes.

Serve chilled.

Note: Do not blend, once you pour in the curd. Just whipping does the great job, else you would be out of perfect texture.

Mint IceCream

Want to beat the heat with Ice Cream, but don’t want to go outside the home, here is my No Cook, No Egg, No essence, No food color, Naturally flavored, very easy and simple Ice Cream with fresh home grown Mint Leaves (motivated by NUTTY SQUIRREL) – MINT ICECREAM.

I would say this Mint Ice cream, a perfect coolant to beat the heat. Also being a mint maniac, I liked this to the core. When it comes to Mint Ice cream, I would say the perfect amount of mint should be induced

Benefits of Home-made Ice cream: You can enhance the sweetness as per your taste buds, you can add the perfect the amount of ingredients to enrich your flavor.

Mint Ice Cream

Mint Ice Cream

Ingredients:

  • Mint leaves – 15 sprigs
  • Fresh Cream – ¾ cup
  • Full fat Milk – 1 cup
  • Sugar – ¾ cup

Preparation:

  • Boil the milk and wait until it comes to room temperature.
  • Grind the sugar to a fine powder and keep it aside or you can go for powder sugar.
  • Separate the mint leaves from the stalk, rinse in running water and keep it aside.
  • Take the mint leaves and blend them well by sprinkling a tsp of water to a coarse paste.
  • In a wide mouth bowl, pour in the fresh cream, milk and add in the sugar, whip them just for few mins until fluffy.
  • Pour in the mint paste to the bowl and whip them well for 3 to 4 mins.
  • Pour it to an air-tight bowl and freeze it for almost 8 hrs.
  • Remove it from the freezer (it looks like ice crystals), scrap it.
  • Blend all the scrapped ice (ice crystals) together along with 2 to 3 sprigs of mint leaves (if needed to enhance your taste buds).
  • Blend them nicely as it should be thick and creamy.
  • Again pour it in an air-tight container and freeze for 10 hours.
  • Remove the container from freezer, once the ice cream comes to perfect texture.

Scoop and serve chilled.

Note: You can also have ice-creams with soft and spongy cakes, I like to have vanilla ice-cream with sponge cake. I would prefer to have this mint ice-cream with coffee cake. You can adjust the sugar level (a tsp) as per your taste buds, I have induced medium level of sugar.

Lychee (litchi) Milkshake

Lychee is sweet and a fragrant fruit, available only on summer. This fruit is originated from china but now found in most of the south East Asian countries. It has a rough skin outside while contains juicy and creamy white flesh inside. It has wonderful taste and so it’s been a very difficult job to prepare food with lychee because my kids loves it to the core.

Lychee is a small fruit packed with loads of healthy nutrients and has a very short shelf life. It is packed with too much of health benefits such as strengthens immunity, blood relaxation, heart disease, blood pressure, aids digestion and bowel movements, weight loss and fluid balance. So beat the heat with this Lychee Milkshake and now let us move on to the recipe…

Lychee (litchi) Milkshake

Ingredients:

  • Lychees – 12 nos
  • Whole fat milk – 3 glass
  • Sugar – as required
  • Rose essence / Vanilla essence – 2 drops

Preparation:

  • Peel and chop the lychees. Keep two of the chopped lychees aside for topping.
  • Take all the other lychees, sugar in a blender and blend well.
  • Pour in a cup of milk along with rose essence or vanilla essence and blend well.
  • Pour in another cup of milk and pulse the blender for just a min.
  • Pour in the glass, refrigerate and serve chilled by topping the chopped lychee.

Note: Use only chilled milk or milk at room temperature, but do not use warm or hot milk.
