Rose Milk Pancake

Pancakes are one of my kids most favorite breakfast dish. And so this resulted me in trying out new combinations with pancake, as my daughter loves pink she wants me to prepare rose milk pancake. This resulted in Rose Milk Pancake – it was yummy, delicious, very aromatic and with a wonderful spongy texture, we loved it to the core. Let me share the recipe…

Rose Milk Pancake

Ingredients:

  • Milk – 1 cup
  • Rose Milk Essence – 1 tbsp
  • Maida / All-purpose flour – 1 cup
  • Baking powder – ¼ tsp
  • Butter – 3 tbsp
  • Egg – 1 no
  • Salt – ¼ tsp

Making of RoseMilk Pancake –

Preparation:

  • Heat a sauce pan, pour the milk, followed by rose milk essence.
  • Bring it to boil, cook in low flame until it reduces to ¾ th quantity. Remove from fire.
  • Break egg in a wide mouth bowl, add baking powder, salt. Beat it well.
  • Pour the rose milk, 1 tbsp of melted butter and beat it well.
  • Add the flour little by little and fold it all together, make sure no lumps are formed.
  • Heat ¼ tsp of butter in a tawa, pour a spoonful of batter in the center of the tawa.
  • Drizzle little butter along the sides of the pancake, cook for 2 to 3 mins.
  • Gently swap the side and cook on the other side.
  • Remove it from fire.

Serve hot by drizzling little Strawberry Hershey’s syrup.

 

 

 

Jack Fruit Pancake Balls

Nowadays I feel my works getting more and more tighten, as the kids grew up with the stuffs like their home works and their naughtiness (must to mention). When both of them are back from school, these kids have a sweet tooth and want something for their snack – mainly focused on sweets or bakes.

I thought of preparing pancake with jack fruit, but my daughter asked me why don’t you prepare pancake in appe pan (kuzhipaniyaram kadai), it would be easy for me hold and eat. This resulted in the making of Jackfruit Pancake balls – an after school or back to home snack.

It was too soft and fluffy. Give a try not only for kids but also for the people from work would enjoy having this. I felt it just like munch when they move here and there all over the house. Let me share the recipe…

Cooking Time: 10 mins

Serves: 5 persons

1 cup = 160 ml

Ingredients:

  • All-purpose flour – 1 cup
  • Buttermilk – 1 cup
  • Unsalted butter – 2 tbsp + 1 tbsp
  • Jack fruit – 7 nos
  • Sugar – 3 tbsp
  • Baking powder – 1 tsp
  • Salt  – ¼ tsp

Preparation:

  • Take the all-purpose flour, baking powder and salt in a wide mouth bowl, mix them well.
  • Bring the butter to room temperature. Deseed the jack fruits and grind them along with sugar to a fine paste with little water.
  • Make a well in the center of the flour, pour in buttermilk, jack fruit puree and 2 tbsp butter. Mix them all together with a spoon.
  • Add in little water if the batter is too thick (it should be in pancake consistency).
  • Heat the appe pan, drizzle little butter in all the holes, pour in the batter (fill the holes) and drizzle little butter, cover and cook for 2 mins.
  • Swap the sides of the pancake balls and cook for another 2 min or until it turns golden brown.
  • Remove from the kadai.

Yum

Serve hot with Maple syrup.

Apple Pancake (Sugar-Free)

Apple Pancake is one among the most delicious breakfast recipes, but here I used powdered jaggery instead of Sugar. And so this could come under the Diabetic-Friendly recipe.

A very simple, easy, healthy, and a less time consumption breakfast. Not only for breakfast, this can also be served as tea-time snacks along with a cup of milk or coffee or tea. Let us move on to the recipe…

Apple Pancake

Apple Pancake

Ingredients:

  • Apple – 1 no (big one)
  • Wheat flour – 1 ½ cups
  • Powdered jaggery – 1 ¼ cups
  • Egg – 1 nos
  • Milk – 1 ¼ cups
  • Baking soda – ½ tsp
  • Salt – a pinch
  • Butter – 4 tbsp

Preparation:

  • In a bowl, break the egg, add in the milk and powdered jaggery. Stir it well until the sugar dissolves or it becomes fluffy.
  • Add in the wheat flour, baking soda, a tsp of butter and a pinch of salt. Continue stirring all these together (be sure no lumps are formed).
  • Peel and grate the apple, add in the grated apples and mix all these together. Rest it for 5 mins.
  • Heat a tsp of butter in pan, spoon the batter and spread it lightly on the pan.
  • Drizzle a tsp of butter along the sides of the pancake.
  • Swap the side and cook until it starts turning golden brown.
  • Remove from fire.

Serve hot with Jaggery syrup or chocolate syrup and a cup of milk. I have served it with chocolate syrup for my kids.
