Thaen Mittai / Honey Candy

Thaen Mittai is one such sweet which makes everyone go drooling once you start eating it. It is found in all the condiments shop in Tamil Nadu. I could remember munching Thaen mittai in my childhood days. It would be more soft, very sweet and every bite squeezes out the sugar syrup. Recently got connected to one of my childhood friend whose mom make all these sweets, just like that got recipe from her. Give a try and nourish your childhood in this Diwali.

Thaen Mittai / Honey Candy

Ingredients:

  • White Lentils / Urad dal / Ulundam paruppu – ¼ cup
  • Idly Rice or Raw Rice – ¾ cup
  • Red Food Color – ¼ tsp
  • Cooking soda – a pinch
  • Sugar – 2 cups
  • Water – 1 cup (for sugar syrup)
  • Salt –  a pinch

Making of Thaen Mittai / Honey Candy –

Preparation:

  • Soak rice and lentil together in a bowl for almost 4 to 5 hrs.
  • Drain the water, grind it to fine paste by sprinkling little water (only when the batter gets struck).
  • Grind it to a fine paste and transfer it to a bowl.
  • Add red food color, cooking soda, pinch of salt and mix this well with your hands, cover and let it rest for 10 to 15 mins.
  • Meanwhile take 2 cups of sugar and a cup water in a heavy bottomed vessel, stir well until the sugar gets dissolved.
  • Cook in medium flame, until the syrup becomes sticky and not to a string consistency.
  • Heat oil in a kadai, take a small spoon, coat it well in the oil, and start scooping in the batter with the spoon.
  • Cook in medium flame, turn and cook on both sides. Drain the oil and remove it from fire.
  • Immediately drop it gently to the sugar syrup, roll and soak it in the syrup.
  • Once it’s soaked well, remove it and transfer it to a plate.

Serve, once it reaches room temperature. Stays fresh for a week once stored in room temperature.

Vegan Kurma

Vegetable kurma is one of the most common food served with Idly, Poori, dosa, parotta, paratha, chapathi in south India. Kurma can be prepared with mixed vegetables, chicken and meat. We use curd/yogurt for Vegetable Kurma for the tangy flavor, but I have substituted tomatoes for curd. This is a quick and easy to prepare, as I have used coconut milk instead of grounded coconut masala. You can extract coconut milk at home, but due to my laziness I used the store bought one. Vegan Kurma

Ingredients:

  • Carrot – 1 no
  • Onion – 1 no
  • Tomato – 1 ½ nos
  • Cauliflower – 2 handfuls of florets
  • Green peas – a handful
  • French beans – a handful
  • Chilli powder – 1 tp
  • Turmeric powder – ½ tsp
  • Ginger-Garlic paste – 1 tbsp
  • Coconut milk – 1 cup
  • Salt to taste
  • Oil – 1 tbsp
  • Coriander and mint leaves –  a handfull
  • Flavored spices (cinnamon – 1 no, cloves – 3 nos, cardamom – 1 no and star anise  1 no)

Preparation:

  • Peel and finely cube the carrot, chop the onions, tomatoes and French beans, make small florets of cauliflower.
  • Heat oil in a kadai, add in the flavored spices and wait until they crackle.
  • Add in the ¾ th portion of finely chopped coriander and mint leaves.
  • Add in the onions, ginger-garlic paste and cook until the raw smell goes off.
  • Add in the tomatoes and cook until they turn mushy.
  • Add in the vegetables all together followed by turmeric powder, chilli powder and salt. Cook for few mins or until the raw smell goes off.
  • Pour in a cup water, cover and cook, until the vegetables are boiled.
  • Remove the lid, when the vegetables are cooked, pour in the coconut milk and cook in medium flame for another 5 mins or until the kurma thickens and the oil starts floating on the top.
  • Garnish with the leftover coriander and mint leaves.

Serve hot. Goes out well with chapathi, poori, Idly, appam, dosa and string hoppers. For more vegetarian curries, gravies and side dish recipes – CLICK HERE.

No Bake, 2 Ingredient Molten Choco Lava Cake

Being a big fan of Dominos Molten choco lava cake, whenever we go for Domino’s Pizza – choco lava cake is a must in the list. I resemble being a kid, when I get Choco Lava Cake. I never ever share my lava cake even with my kids, even if I am not able to eat that moment, will have it later, but never share with anyone – that selfish moment.

Recently I got to try this Choco Lava Cake but in a unique manner – no bake with just 2 ingredients and just 5 mins. It was yummy, I have used Marie Biscuits, but you can also use any brand choco chips biscuit for perfect texture. Let me share the recipe…

Ingredients:

  • Marie Biscuits or any Choco chip biscuits – 10 nos
  • Hershey’s chocolate syrup or any chocolate syrup – 2 cups

Preparation:

  • Take the biscuits in a blender and blend them to a fine powder.
  • Transfer ¾ th portion of biscuit powder to a wide mouth bowl, pour the hershey’s syrup little by little and start mixing it with the biscuit powder.
  • Roll it to dough, use only hands (it would help to know the consistency).
  • Take a bowl and a butter paper, line the bowl with the butter paper, now add a small portion of the bowl and gently press them.
  • Make a well in the center of the dough, pour the hershey’s syrup and again top it with the rolled biscuit dough.
  • Gently give a press, now invert the bowl to a plate and gently remove the butter paper.
  • Sprinkle little biscuit powder over the molten lava cake.

Serve it with a cup of milk.
