Muskmelon Pancake

My love towards muskmelon never ends and this results in bringing up new dishes. One such dish is my Muskmelon Pancake, when it comes to pancake my kids loves it a lot.They never mind what I induce in pancake, only the word PANCAKE bring them to kitchen. But this it was something after they had the pancake, I could hear “wow, excellent, delicious, so soft and very well done mom and next time when will we have this”. Really feeling happy, so now I could call this as “Kids Friendly dish”. Let us move on to the recipe…

Muskmelon Pancake

Muskmelon Pancake

Ingredients:

  • Muskmelon puree – 1 cup
  • Milk – ½ cup
  • Eggs – 2 nos
  • Wheat flour – 2 cups
  • Baking powder – 1 tsp
  • Butter – 100 gm
  • Brown sugar – 1 cup
  • Cardamom powder – ½ tsp

Preparation:

  • Beat eggs well in a bowl, add in the milk gain beat them well.
  • Add in the brown sugar and beat well, till it dissolves.
  • Add in the muskmelon puree mix it well.
  • Add in the flour little by little along with the baking powder, cardamom powder and fold it well, be sure that no lumps are formed.
  • Check for the consistency if it’s thick add in little more milk and if it’s thin add in little more flour and mix them well.
  • Melt the butter and pour in a tbsp of butter to the batter and mix them gently.
  • Heat a tsp of butter on the tawa and drop in the batter with a laddle and spread it (little).
  • Drizzle butter over the sides of the pancake, after few mins swap the sides and wait till gets cook.

Serve hot with jam or any dips. I have served it with homemade Tomato Jam.

Crispy Potato Fry

This is an authentic dish of tamilian, I prepare this every now and then. I love this dish a lot, not only me most of them love this dish a lot and also this goes out well with any vegetarian dish. Many of us expect a spiced and crispy potato in this dish, but most of them say that the potatoes become soft. I do the same below given procedure so that the potato comes out crispy and the oil gets separates at the final stage.

Crispy Potato Fry / Potato Fry

Ingredients:

  • Potato – ½ Kg
  • Chili powder – 1 ½ tsp
  • Turmeric powder – ½ tsp
  • Mustard seeds – ¼ tsp
  • Split Blackgram – ½ tsp
  • Curry leaves – a string
  • Salt to taste
  • Oil – 1 tbsp

Preparation:

  • Peel and chop the potatoes into cubes (small pieces). Soak them in water, so that the potatoes never darken in color.
  • Heat oil in a non-stick kadai, add mustard, black gram and curry leaves, wait till it crackles.
  • Add the potato pieces along with chili powder, turmeric powder and Cook till they are half done.
  • Stir once in a while, else it would be burnt.
  • When it’s ¾ th done, add in the salt and cook till the potatoes are perfectly done.

Serve hot. This goes out well with all variety rice, rasam rice and curd rice.

Note:

  • Do not add salt before the potatoes are half done, because the potato pieces would become soft and you miss the crispy texture.
  • You can also increase the qauntity of Split Blackgram to 1 tsp, it would add crunchiness to the dish.

Banana Pancake

I have prepared this pancake for PANCAKE, which was on feb 17th. I came to know that Feb 17th was pancake sometime around 8 p.m on 17th, suddenly thought of preparing two varieties of pancake which one of which I have posted right on Feb 17th, but this one due to some of my personal works this recipe got delayed.

Now I am going to share my Banana Pancake which I have served with Coconut Jaggery Dip (vellappagu). Let us move on to the recipe …

Banana Pancake with Coconut Jaggery Dip

Banana Pancake with Coconut Jaggery Dip

Ingredients:

  • Bananas – 3 nos (ripen)
  • All purpose flour / Maida – 250 gm
  • Sugar – 3 tbsp
  • Vanilla essence – 1 ½ tsp
  • Salt – a pinch
  • Eggs – 2 nos
  • Milk – 1 cup
  • Baking powder – 1 ½ tsp
  • Butter – 30 gm

Preparation:

  • Melt the butter, Take 20 gms of butter in a bowl and break in eggs, add sugar. Stir them well, till fluffy.
  • Mash the banana’s and adds them to egg mixture and stir well.
  • Pour in the vanilla essence and milk; beat them again, till the sugar dissolves.
  • Add in the maida/flour, salt and baking powder and fold them gently with the egg mixture, be sure that no lumps should be formed.
  • Heat butter in the tawa and scoop the batter. Sprinkle butter on the sides of the pancake.
  • Wait till they get cook and then swap the side, again cook them for few mins, till the pancake is done.

Serve hot. I have accompanied Coconut Jaggery dip along with this Banana Pancake.
