Minty Tomato Punch

I could hear everyone, becoming dehydrated and getting more health issues, because of summer and so now onwards let’s start Beating the heat together with healthy, yummy and refreshing juices. I have already shared few summer recipes last year – CLICK HERE for more summer recipes.

Minty Tomato Punch is a tangy, as you desire you can turn in sweet by adding sugar or salty by adding salt. A healthy juice with a combination of mint, tomato, lemon and roast cumin seeds powder, which comes with a tangy, aromatic and refreshing flavor and perfect drink for this summer. Not only for the summer, this juice can be consumed all over the year. Let me share the recipe…

Ingredients:

  • Lemon – 2 nos (medium size)
  • Tomato – 5 nos (medium size)
  • Mint – 3 strands
  • Cumin powder – ½ tsp
  • Salt to taste
  • Sugar – 3 tbsp (optional).

Preparation:

  • Clean and roughly chop the tomatoes.
  • Clean and separate the mint leaves from mint stalk.
  • Take tomatoes and mint leaves, in a mixer jar and grind them for 3 mins or until the tomatoes are ground well.
  • Add a cup of water, grind it for few mins.
  • Strain the juice and transfer the ground flesh to the mixer and grind with one more cup of water.
  • Strain the juice, sprinkle cumin powder and salt. Mix it well.
  • Add one more cup of water, mix it well.
  • Add sugar if you prefer it sweet else serve it.

Refrigerate and serve chilled or make use of cold water while mixing the juice and serve chilled. Garnish with finely chopped tomatoes and a mint leaf strand, just before you serve.

Strawberry Kiwi Mojito

Now it’s summer time, and I feel colorful to see the streets with beautiful, fresh and colorful fruits. My kids don’t have certain fruits, when it comes to kiwi my son never has it. Also as of summer even we feel to have juices all the time and this resulted in making Strawberry Kiwi Mojito for our Tea time with some fish fries. Let us move on to the recipe…

Strawberry Kiwi Mojito

Strawberry Kiwi Mojito

Ingredients:

  • Kiwi – 2 nos
  • Strawberry – 6 nos
  • Sugar – 3tbsp
  • Mint leaves – a handful
  • Club soda / Sparkling water – ½ litre

Preparation:

  • Peel and finely chop the kiwi fruits and keep it aside.
  • Clean and finely chop the strawberry into small pieces.
  • Take strawberry pieces along with sugar in a kadai, cook in medium flame.
  • Keep on stirring, once when the sugar gets dissolves, start mashing the strawberry with your spoon.
  • Cook for 5 to 10 mins, until it reaches a thick syrup like consistency.
  • Remove from fire and bring it to room temperature.
  • Finely chop the mint leaves, transfer it to a mortar and crush it well.
  • Add in half the quantity of kiwi fruit and crush them slightly.
  • Take the glass, add in the crushed kiwi fruit and pour in 2 tbsp of strawberry syrup and few finely chopped mint leaves.
  • Pour in the club soda and top it with few pieces of strawberry and kiwi.

Serve chilled.

 

Naaval Pazham / Indian Blackplum Juice

Naaval Pazham which is commonly known as Nava Pazham in tamil, also called as Jamun Fruit and Balck Plum is a seasonal fruit and found during the month of June to August. This fruit is being sold along the streets corners during summer.

Coming to health benefits, it is rich in iron, minerals and acts as a coolant and induces digestion power. It is said to be good for diabetics and purification of blood. It has a strong purple color. Let us move on to the recipe…

Naaval Pazham / Indian Blackberry Juice

Naaval Pazham / Indian Blackberry Juice

Ingredients:

  • Naaval Palam / Indian Blackberry – 15 nos
  • Lemon Juice – 1 tsp
  • Salt – ¼ tsp
  • Sugar or honey – as required
  • Water – as needed.

Preparation:

  • Wash Indian blackberry / Naaval palam and deseed it.
  • Take the chopped fruit, lemon juice, salt, sugar or honey in a blender and Blend it well to a smooth paste.
  • Strain to remove the pulps and add some more water if required.

Serve chilled with ice cubes.
