Gingerbread Cake with VIDEO

Gingerbread is one most familiar recipe during winters and a must for Christmas and New Year feast. When I got see most of my blogger buddies sharing Gingerbread Men cookies, thought of sharing something different from that and this resulted me for this Gingerbread Cake.

Gingerbread cake consumes almost 5 mins more than the regular cakes, but it tastes heavenly, smells winter with moist texture and beautiful color. Let me share the recipe here, why wait, give a try and feel the winter before it moves off.

Gingerbread Cake

Ingredients:

  • All-Purpose flour – 2 ½ cups
  • Brown sugar- 2 cups
  • Vegetable oil – 1 ¾ cups
  • Molasses / Palm Jaggery sryup – 3 tbsp
  • Baking powder – 1 ½ tsp
  • Cooking soda – ½ tsp
  • Cloves powder – ½ tsp
  • Cinnamon powder – 1 ½ tsp
  • Dry ginger powder – 1 ½ tsp
  • Eggs – 3 nos (room temperature)
  • Butter milk – 300 ml
  • Milk – 150 ml
  • Salt – ¼ tsp

Making of Gingerbread Cake –

Preparation:

  • In a wide mouth bowl, sieve all-purpose flour, baking powder, cooking soda, cinnamon powder, salt, cloves powder and dry ginger powder, all together and keep it aside.
  • In another bow, break the eggs, add brown sugar and beat it until the sugar dissolves.
  • Add molasses/palm jaggery syrup followed by vegetable oil, butter milk and milk by beating them at regular intervals of time.
  • Meanwhile pre-heat the microwave to 180 degree C and grease the baking tray.
  • Add the sieved flour little by little to the wet ingredients and fold them gently (make sure no lumps are formed).
  • Pour the batter to the baking tray and bake at 180 degree C for 10 mins or until the tooth pick inserted in the centre of the cake comes out clean.
  • Transfer it to plate, once it comes to room temperature.

Serve at room temperature.

For Icing:

Ingredients:

  • Cream cheese – 1 cup
  • Powdered sugar – ¾ cup

Preparation:

  • Bring the cream cheese to room temperature, transfer it to a bowl, add the powdered sugar and beat it well until the sugar dissolves.
  • Cut the cake into two equal halves, spread the cream cheese frosting over a piece of cake and cover it with the other piece.
  • Spread the cream cheese frosting all over the cake and refrigerate for 5 to 6 hrs.

Cut and serve chilled.

Wheat Coffee Cake with Walnuts (Eggless, Milkless, Butterless)

As most of us are looking out for healthy recipes, but like to have desserts especially when it comes to cakes, who say no? So thought of making a healthy cake, this resulted in my vegan Coffee Cake with walnuts. Already I shared my Coffee Cake with Nutty crunch and this cake is very special and completely different from that as it has no eggs, no butter, no sugar, and no milk and prepared with wheat flour/atta.

This cake is very healthy dessert and good not only for weight watchers, but also for diabetes people. Also this tastes yum, and has the soft and fluffy texture which would be liked by everyone. Vegan Coffee Cake with Walnuts


Ingredients:

  • Wheat flour / Atta – 1 ½ cups
  • Baking powder – 1 tsp
  • Cinnamon powder – ½ tsp
  • Salt – ½ tsp
  • Walnuts – ½ cup
  • Oil – 1 cup
  • Black Coffee – 1 cup
  • Lemon Juice – 1 tsp
  • Organic Brown Sugar – 1 cup

Making of Vegan Coffee Cake with Walnuts –

Preparation:

  • Sieve the wheat flour, cinnamon powder, salt and baking powder, all together in a bowl. Keep it aside.
  • Crush or finely chop the walnuts to pieces and keep it aside.
  • Take a wide mouth bowl, pour oil, black coffee, lemon juice and add the organic brown sugar, mix it well until the sugar is completely dissolved.
  • Take 2 tsps of sieved flour and keep it aside.
  • Add the leftover sieved flour to the black coffee mixture, little by little and fold them well without any lumps.
  • Meanwhile preheat the microwave to 180 degree C and grease the cake tray.
  • Add the walnuts to the reserved sieved flour and mix it well. Make sure that the walnuts have got coated well with the flour.
  • Add walnuts along with the flour to the cake batter and mix it well. Refer the above video for the consistency.
  • Transfer the cake batter to the greased tray and bake it for 5 to 10 mins or until a tooth pick inserted in the centre of the cake comes out clean at 180 degree C.
  • Once baked, let the cake rest for 5 mins and transfer the cake to a plate.

Serve hot or at room temperature or chilled. Perfect for a tea-time or perfect for brunch with a scoop of ice cream.

Butter Sponge Cake / Vanilla Sponge Cake / Sponge Cake

Already I have shared vanilla cake and this is similar to that but the techniques I used here are completely different which makes the cake more fluffy and spongy. Also this would be more easy for the beginners since there is no any difficulties and also refer to my you tube video for the texture, consistency and tricks. Let me share the recipe…

Butter Sponge Cake / Vanilla Sponge Cake / Sponge Cake

Ingredients:

  • All-purpose flour / Maida – 2 cups
  • Butter – 1 cup
  • Eggs – 4 nos
  • Sugar (powdered sugar is preferable) – 1 cup
  • Salt – ¼ tsp
  • Milk – 1 cup
  • Baking powder – 2 tsp
  • Vanilla essence – 2 tsp

Making of Butter Sponge Cake / Vanilla Sponge Cake / Sponge Cake –

Preparation:

  • Break the eggs and separate the egg yolks and white. Melt the butter.
  • Sieve the flour, baking powder and salt together ad transfer it to a bowl.
  • In a wide mouth bowl, pour the melted butter, powdered sugar and milk, beat it well until the sugar is dissolved.
  • Add the egg yolk to the butter, milk mixture and beat it well.
  • Take the egg white in another bowl, and beat it well, until it becomes thick and fluffy (refer the above given video for consistency).
  • Add the sieved flour little by little to the butter-milk mixture and fold the flour in it.
  • Pour in the vanilla essence to the flour and fold it well,
  • Pour the beaten egg white to the flour mixture and fold it well.
  • Meanwhile pre-heat the microwave to 180 degree c. Grease the baking tray.
  • Pour the batter to the greased tray and bake it microwave for 5 to 6 mins at 180 degree C or until the tooth pick inserted in the middle of the cake comes out clean.
  • Rest the cake in the baking tray for 5 mins and then transfer it to another tray.

Serve hot or at room temperature.
