Green Lentil and Sweet Potato – Protein Rich

Recently I have been blogging about some protein rich food, I have tried out many breakfast and now to the lunch. As this is rich in protein, its good for weight watchers and body builders. Protein rich Lunch – Green Lentil and sweet potato rice with Sauted Carrots n Beets and Fish Fry.

Let me share the recipe of Green Lentil and Sweet Potato…

Green Lentil and Sweet Potato

Ingredients:

  • Green Lentil / Mung Bean / Paasipayaru – 1 cup
  • Chilli powder – ½ tsp
  • Cumin powder – ½ tsp
  • Sweet potatoes – half the quantity of the green lentil
  • Salt to taste
  • Oil – 2 tsp

Preparation:

  • Pressure-cook or boil green lentils for 3 whistles (mashing consistency).
  • Pressure-cook sweet potato for 3 whistles (cubes but able to mash).
  • Heat oil in heavy bottom vessel; add the boiled mashed potatoes followed by chilli powder and Cumin powder with little salt.
  • Mash the green lentils and add them to the sweet potatoes, pour ½ cup of water, cook in medium flame by stirring once in a while.
  • Sprinkle salt and remove from fire.

For Sauted Carrot and Beet:

Peel and chop the carrots and beets lengthwise, steam them. Heat a tsp of olive oil in a pan, add the steamed carrots and beets followed by salt and pepper powder, give them a toss and transfer it to a plate.

For Fish Fry:

Marinate the Fish, with lime juice, salt and pepper powder for 30 mins, shallow fry the fish pieces and serve with onions and lemon wedge.

 

Rajma Paratha / Red Kidney Beans Paratha

Paratha is one of my favorite, not only me but also my family likes to have paratha atleast once in a week. My daughter love to get it for her lunch box, not only mine but I have seen most of the kids throwing out the beans from the gravy. Rajma Paratha is a healthy, easy and a perfect lunch box dish. Thought of using Rajma in the better way, which should be liked and not thrown out by them and this resulted in my RAJMA PARATHA.

Rajma Paratha goes out well with any dips or any curry. I have served it with Mayonnaise and Lamb Bones Curry. Let me share the recipe…

Ingredients:

  • Boiled Rajma (Red Kidney Beans) – 1 cup
  • Wheat flour / Atta – 1 ½ cups
  • Green chilli – 2 nos (optional)
  • Cumin seeds (crushed) – ¼ tsp (optional)
  • Salt to taste
  • Oil – 4 tbsp


Preparation:

  • Mash the rajma well or grind the rajma to a coarse paste.
  • Finely chop the green chillies and crush the cumin seeds.
  • Take wheat flour / atta, salt in a wide mouth bowl, add the rajma paste followed by green chillies and cumin seeds.
  • Crumble it well with your hands, pour water little by little and knead the dough.
  • Divide the dough to small portion, roll it to a ball.
  • Flatten the balls to a thin circle by dusting it with wheat flour/atta.
  • Heat a tawa, rub it with oil, gently add the flatten dough, drizzle oil along the sides of the paratha and cook for a min.
  • Swap the sides and cook until the paratha is done.

Serve hot with any Curry (curry should be watery) and a dip.

Wheat Coffee Cake with Walnuts (Eggless, Milkless, Butterless)

As most of us are looking out for healthy recipes, but like to have desserts especially when it comes to cakes, who say no? So thought of making a healthy cake, this resulted in my vegan Coffee Cake with walnuts. Already I shared my Coffee Cake with Nutty crunch and this cake is very special and completely different from that as it has no eggs, no butter, no sugar, and no milk and prepared with wheat flour/atta.

This cake is very healthy dessert and good not only for weight watchers, but also for diabetes people. Also this tastes yum, and has the soft and fluffy texture which would be liked by everyone. Vegan Coffee Cake with Walnuts


Ingredients:

  • Wheat flour / Atta – 1 ½ cups
  • Baking powder – 1 tsp
  • Cinnamon powder – ½ tsp
  • Salt – ½ tsp
  • Walnuts – ½ cup
  • Oil – 1 cup
  • Black Coffee – 1 cup
  • Lemon Juice – 1 tsp
  • Organic Brown Sugar – 1 cup

Making of Vegan Coffee Cake with Walnuts –

Preparation:

  • Sieve the wheat flour, cinnamon powder, salt and baking powder, all together in a bowl. Keep it aside.
  • Crush or finely chop the walnuts to pieces and keep it aside.
  • Take a wide mouth bowl, pour oil, black coffee, lemon juice and add the organic brown sugar, mix it well until the sugar is completely dissolved.
  • Take 2 tsps of sieved flour and keep it aside.
  • Add the leftover sieved flour to the black coffee mixture, little by little and fold them well without any lumps.
  • Meanwhile preheat the microwave to 180 degree C and grease the cake tray.
  • Add the walnuts to the reserved sieved flour and mix it well. Make sure that the walnuts have got coated well with the flour.
  • Add walnuts along with the flour to the cake batter and mix it well. Refer the above video for the consistency.
  • Transfer the cake batter to the greased tray and bake it for 5 to 10 mins or until a tooth pick inserted in the centre of the cake comes out clean at 180 degree C.
  • Once baked, let the cake rest for 5 mins and transfer the cake to a plate.

Serve hot or at room temperature or chilled. Perfect for a tea-time or perfect for brunch with a scoop of ice cream.
