I am sharing this recipe with a heavy heart, as the mango season is almost over, with my last set of mangoes. Usually my family loves pancake to the core, and also, it’s been a great and quick breakfast for kids, when they go to school or even for their snack box on Saturday’s as they have just half a day school or also you can prepare as snack when they are back to home.

Eggless Mango Pancake is a soft, fluffy and spongy breakfast/snack box/after school dish that can be prepared easily in minutes. Ingredients:

  • All-purpose flour / Maida – 1 ½ cup
  • Mango – 1 no (medium size n roughly chopped)
  • Butter – 4 tbsp
  • Milk – ½ cup
  • Coconut milk – 1 cup
  • Desiccated Coconut – ½ cup
  • Baking powder – 1 ¼ tsp
  • Salt – ¼ tsp
  • Sugar – ½ cup (adjust the quantity of sugar as per the taste of the mango)

Making of Eggless Mango Pancake recipe –

Preparation:

  • Grind the roughly chopped mangoes to fine paste and keep it aside.
  • Take a wide mouth bowl, pour in the milk, coconut milk, sugar, mix it well or until the sugar gets dissolved.
  • Add the all-purpose flour, baking powder, sugar, salt, desiccated coconut and a tbsp of butter. Mix it well.
  • Add desiccated coconut, butter mix it well. Then add the flour/all-purpose flour little by little. Mix it well, make sure no lumps are formed.
  • Add the ground mango paste, baking powder and mix it well. Make sure no lumps are formed.
  • Heat a tsp of butter in a tawa, pour a spoonful of batter in the center, spread it little.
  • Drizzle butter along the sides of the pancake, cook in medium flame (since we have used mango paste, the pancake would get burnt soon when cooked in high flame).
  • Flip the side, drizzle little butter along the sides, and cook for few mins or until the pancake turns golden brown in color.
  • Remove from fire.

Serve hot with butter or maple syrup or chocolate syrup.

Soya chunks is commonly known as meal maker, which is protein rich food and acts as a substitute of non-vegetarian’s protein. Meal Maker is also good for weight loss, usually in mom’s place we don’t ever use soya chunks or meal maker, but came across this soya chunks / meal maker through my mother-in-law. My mother-in-law goes very often to temple, every day she has a reason to avoid non-veg and so soya chunks / meal maker is being the substitute for many of her dishes right from Biryani till Kootu and fry.

Soya chunks Fry / Meal Maker varuval is a perfect side dish for any variety rice or lunch when accompanied with rice and curry. Soya chunks fry is very simple and easy to make with few ingredients available at our kitchen. Also this crisp and soft, so goes out well with curd rice. Let me share the recipe…

Ingredients:

  • Soya Chunks / Meal Maker – 150 gm
  • Onion – 1 no (medium size)
  • Turmeric powder – ¼ tsp
  • Cumin powder – 1 tsp
  • Split Black gram / split Black lentil – ½ tsp
  • Chilli powder – 1 tsp
  • Mustard seeds – ¼ tsp
  • Curry leaves – 2 sprigs
  • Salt to taste
  • Coconut Oil or any cooking oil – 1 tbsp

Making of Soya chunks Fry / Meal Maker Fry / Meal Maker Varuval –

Preparation:

  • Boil a cup of water, once the water starts boiling, remove it from fire, add the soya chunks / meal maker and soak it for 2 to 5 mins or until it becomes soft.
  • Drain the water, squeeze out the water from the soya chunks/meal maker and finely chop them into pieces.
  • Heat oil in a kadai, add the mustard, split black gram and curry leaves.
  • Add the onions and cook until the onions turn transparent.
  • Add the soya chunks / meal maker, add the turmeric powder, chilli powder, cumin powder and salt, cook for few mins or until the raw smell goes off.
  • Drizzle little oil along the sides, and cook in medium flame for 2 to 3 mins or until the soya chunks/meal maker turns crisp or golden brown in color.
  • Remove it from fire and transfer it to a bowl.

Serve hot with lunch.

Note: Cover the bowl, only when the soya chunks fry / meal maker varuval comes to room temperature, so that it stays crisp else it would turn soggy.

 

 

Bread Making Class at Toscano, Bangalore

Got an invite for Toscano’s Master Cooking Class for their Bread Baking class – Wow! I like Bread baking, but most of the time it’s been a OOPS experience for me. I was very happy, for attending the Bread Making class, previously went for a master class about Pasta and it was super good.

Toscano at VR Bengaluru, conducted it’s cooking class under the title “Unveil the Secrets of Bread and Baking at Toscano” where Chefs Sadish Kumar and Goutham Balasubramanian of Thursday, 13 July,2017 shared the secrets of Bread and Baking techniques with home-bakers.

Chef Sadish with baked goodies

It was a 2 hours class, and we got learn the essentials of dough making, with 3 different types of bread – Multi-grain bread, Focaccia and Bread Sticks. The Cooking demo was a great experience, where the chefs revealed the secrets from mixing, kneading, fermenting, shaping and finally the baking part. I would say the class was too good, for even a beginner to get their hands-on bread baking to a perfect one.

The class was conducted at Toscano, VR Bengaluru, Whitefield Main Road. They charge Rs.999/- for class with tea, snacks, lunch and a recipe sheet.
