Eggless Spooky Witches Finger recipe / Eggless Halloween Recipe / Eggless Whole Wheat cookie

Ingredients:

  • Whole wheat flour – 1 ½ cups
  • Sugar – ½ cup
  • Butter (room temperature) – ½ + 1 tbsp
  • Milk – 3 tbsp
  • Baking powder – 1 tsp
  • Almonds / Badam – 10 nos
  • Red food colour – ¼ tsp

Making of Eggless Spooky Witches Finger / Halloween video recipe –

Preparation:

  • Blanch the almonds and slice them into two equal halves.
  • Mix 2 tbsp of water in red food color and soak the sliced almonds / badam to it.
  • Make sure to use the butter only at room temperature.
  • In a wide mouth bowl, sieve the wheat flour along with baking powder and keep it aside.
  • Grind the sugar to a fine powder, add it to flour mixture.
  • Add the butter to the flour, crumble well with your fingers.
  • Pour milk little by little (1 tbsp at a time), and knead the flour to a dough.
  • Roll the kneaded dough in a cling film, refrigerate for 15 mins, later remove it and wait for 5 mins.
  • Dust the work area with flour, take a small portion of the dough, roll it length wise, give impression with fork, place a slice of almond/badam in one edge of the rolled dough. (looks like finger)
  • Meanwhile preheat microwave to 180-degree C, grease a tray, place the rolled fingers over the tray and bake them at 180-degree C for 5 mins or until they are baked.
  • Remove it the tray from the oven, let it rest for 10 mins, remove it to a plate and bring it to room temperature.

Store it in an air-tight container, once it reaches room temperature.

Sweet somas or Karanji is a most famous during Vinayakar Chaturthi and Diwali festival among all Indian families. Somas is a deep fried sweet snack with filling, filling can be made with different types. I have used roasted gram, coconut and cardamom for filling.

Sweet Somas recipe / somas recipe / Karanji Recipe

It is also known as somasi in Tamil and Kajjikayali in Telugu and Karanji in Maharashtra because of the filling. Let me share the recipe…

Making of Somas / Karanji –

Ingredients:

  • Maida / All-purpose flour – 1 ½ cups
  • Rava / Semolina / Sooji – ¼ cup
  • Water – ½ cup
  • Salt – ½ tsp
  • Ghee / Clarified butter – 1 ½ tsp
  • Roasted gram / Pottukadalai / Porikadalai – ½ cup
  • Grated coconut – ½ cup
  • Sugar – ½ cup
  • Cashew nuts (broken into smalle pieces)  – ¼ cup
  • Cardamom powder – ½ tsp
  • Oil – 1 cup (for deep frying)

Preparation:

  • Take a bowl, add maida/all-purpose flour, rava/semolina, salt, mix it well. Pour water little by little and start kneading the dough to stiff consistency.
  • Drizzle a tsp of oil over the kneaded dough, knead for few seconds and cover it with a damp cloth.
  • Meanwhile, dry roast the roasted gram, remove from fire and spread it over a plate.
  • Add ¼ tsp of ghee and roast the grated coconut, until they turn brown in color, spread it along with roasted gram.
  • Add the leftover ghee and roast the cashew nuts until they turn golden brown in color. Remove it from fire and transfer it to a bowl.
  • Grind the sugar to fine powder, transfer it to a bowl
  • Grind roasted gram, roasted coconut to a fine powder and add it to the sugar.
  • Also add cardamom powder and roasted cashew nuts along with ghee to the mixture and mix it well.
  • Take a small portion of the dough and flattened it to a circle shape, keep a tea spoon full of filling in the center of the flattened dough.
  • Dip your finger in water, apply it along the edges of the dough, now fold it to a half circle, then give a gentle press with fork along the sides.
  • Heat oil in a kadai, gently add them one by one and fry until they turn golden brown on both sides.
  • Drain the oil and remove it from fire.
  • Serve once it reaches room temperature.

Store in an air-tight container once it reaches room temperature, so that it stays fresh for a week .

Dhokla topped with sweet water tempering – Instant Rava Dhokla recipe / Instant Dhokla recipe / Tricolor Dhokla recipe – Independence Day Special

Preparation Time – 10 mins

Cooking Time – 20 mins

Serves – 4 nos

Ingredients:

  • Rava / Semolina / Sooji – 1 cup
  • Sour Curd – 1 cup
  • Water – 1/3 cup
  • Eno (original flavor) / Cooking soda – 1 tsp
  • Cooking oil – 1 tsp + 1 ½ tbsp
  • Mustard seeds – ½ tsp
  • Cumin seeds – ½ tsp
  • Green chilli – 1 no
  • Curry leaves – a sprig
  • Salt – ¾ tsp (as per your taste)
  • Sugar – 2 tsp
  • Food color (orange and green) – ¼ tsp each
  • Lemon juice – 1 tsp

Preparation:

  • Take rava/semolina/sooji, Eno, sour curd, salt all together in a bowl, mix them well by pouring water little by little and make sure no lumps are formed.
  • Let it rest for few mins, meanwhile boil water in a steamer or idli vessel.
  • Divide the dhokla batter to three equal portions, add orange food color to one portion and green food color to the other portion. Mix it well.
  • Grease the dhokla mould with oil, pour the batter, first orange, then white and later green as the three portions.
  • Place the mould in the stand and steam it in the steamer for 15 mins or until the dhokla is cooked (spoon inserted in the middle of the dhokla should come out clean).
  • Meanwhile, heat 1 ½ tbsp of oil in a pan, add mustard, cumin seeds and curry leaves, wait until they crackle, add the slit green chili and cook for a min.
  • Add sugar and pour water and a tsp of lemon juice, bring it to boil for 3 mins and remove it from fire.
  • Remove the dhokla gently to a plate, pour the tempered sweet water over the dhokla.

Serve hot.
